Blueberry Cheesecake Ice Cream. 2 eggs. 3/4 cup granulated sugar. 1 cup sour cream. 1 cup light cream. 1 tsp. vanilla extract. 1/2 tsp lemon rind, grated. 1 cup blueberries. Beat the eggs, add sugar, and beat until stiff. In a separate bowl, beat sour cream, light cream, vanilla and lemon rind until smooth. Add to the egg mixture and chill. ................
