Lemon curd is often spread on biscuits, muffins, toast, or scones as a morning or afternoon treat in the U.K. You can also fill a cooked tart or pie shell with it for a simple dessert.

INGREDIENTS

1 premade pie crust

Beef Mixture 1 tbsp. olive or vegetable oil ? onion, chopped 1 garlic clove, minced 8 ounces ground beef ? tsp salt and pepper 1 ? cups frozen vegetable mixture Carrots, corn, peas and/or green beans 1 tbsp. all-purpose flour, 1 tbsp. butter 1/4 c. low-sodium beef broth

Potato Topping 2 medium potatoes 1 Tbsp dried parsley

DIRECTIONS Crust Preparation

1. Preheat oven to 375?. 2. Coat a 4 or 6 hole muffin tin with cooking spray. Lightly flour a work surface. Roll out pie crust

and cut crust into rounds for your muffin tin. Place each crust piece in a muffin hole and press down. Poke bottom of crust with fork to prevent crust from rising. 3. Bake until lightly golden, 6 to 8 minutes. Once crust is done, heat broiler to high setting. . Beef Mixture 1. In a large saute pan over medium heat, heat oil. Add chopped onion and minced garlic. Cook until softened and onions are almost see through. This should take about 5 minutes. 2. Add ground beef and cook until no longer pink, 5 minutes more. Drain excess fat. 3. Stir in salt, pepper and frozen vegetable mix and cook until warmed through, 3 minutes more. 4. Using your small saute pan melt butter over medium heat. Add flour and whisk until combined and golden, 1 minute, then pour in beef broth. Mix. 5. Combine with beef mixture and cook until mixture thickens, 3 minutes. 6. Fill baked pie crusts with ground beef mixture.

Mashed Potato Topping 1. Pierce 2 medium potatoes with a fork and microwave for 4 minutes. 2. Run potatoes under cold water and peel. 3. Place potatoes with 1 Tbsp butter and 1 Tbsp milk in a bowl and use a fork to mash. 4. Place 1-2 Tbsp of potato on top of beef mixture. 5. Place in oven and broil until tops of mashed potatoes are golden. About 5-8 minutes. 6. Garnish with parsley and serve.
