Lemon curd is often spread on biscuits, muffins, toast, or scones as a morning or afternoon treat in the U.K. You can also fill a cooked tart or pie shell with it for a simple dessert.
For this recipe, you'll need 2 or 3 medium lemons to get 1/2 cup of juice. To get more juice from a lemon (or other citrus fruit), microwave a whole one on high for about 20 seconds or roll it under your palm on a hard surface. Doing this helps break up the cells of juice inside.

Procedure 1. Using a whisk, stir the sugar and lemon juice together in a heavy, medium saucepan. Beat in the eggs, and add the butter chunks.
2. Set the pan over medium-low heat and cook, whisking constantly, until the mixture forms a thick sauce, about 15 minutes. **If the eggs start to curdle, remove from the heat and keep whisking until the mixture cools slightly. Then continue cooking over low to medium heat, whisking constantly. The curd should NOT boil or bubble at any point.
3. Your sauce is done when the mixture becomes slightly foamy and is thick enough to coat the back of a wooden spoon.
4. Pour the sauce into a clean air tight container and refrigerate overnight.

Cut the butter into chunks and add it to the bowl, blend with a pastry blender until mixture is crumbly. 4. Add buttermilk and dried cranberries, stir just until moistened. 5. Turn dough out onto a lightly floured surface; knead 5-6 times. Pat into a 8-inch circle. 6. Cut into 8 wedges, and place 1 inch apart on a lightly greased baking sheet. 7. Brush with the 1 T milk and sprinkle with 1 T sugar. 8. Bake for 15 minutes or until lightly golden brown.

INGREDIENTS
1 premade pie crust
Beef Mixture 1 tbsp. olive or vegetable oil ? onion, chopped 1 garlic clove, minced 8 ounces ground beef ? tsp salt and pepper 1 ? cups frozen vegetable mixture Carrots, corn, peas and/or green beans 1 tbsp. all-purpose flour, 1 tbsp. butter 1/4 c. low-sodium beef broth
Potato Topping 2 medium potatoes 1 Tbsp dried parsley
DIRECTIONS Crust Preparation
1. Preheat oven to 375?. 2. Coat a 4 or 6 hole muffin tin with cooking spray. Lightly flour a work surface. Roll out pie crust
and cut crust into rounds for your muffin tin. Place each crust piece in a muffin hole and press down. Poke bottom of crust with fork to prevent crust from rising. 3. Bake until lightly golden, 6 to 8 minutes. Once crust is done, heat broiler to high setting. . Beef Mixture 1. In a large saute pan over medium heat, heat oil. Add chopped onion and minced garlic. Cook until softened and onions are almost see through. This should take about 5 minutes. 2. Add ground beef and cook until no longer pink, 5 minutes more. Drain excess fat. 3. Stir in salt, pepper and frozen vegetable mix and cook until warmed through, 3 minutes more. 4. Using your small saute pan melt butter over medium heat. Add flour and whisk until combined and golden, 1 minute, then pour in beef broth. Mix. 5. Combine with beef mixture and cook until mixture thickens, 3 minutes. 6. Fill baked pie crusts with ground beef mixture.
Mashed Potato Topping 1. Pierce 2 medium potatoes with a fork and microwave for 4 minutes. 2. Run potatoes under cold water and peel. 3. Place potatoes with 1 Tbsp butter and 1 Tbsp milk in a bowl and use a fork to mash. 4. Place 1-2 Tbsp of potato on top of beef mixture. 5. Place in oven and broil until tops of mashed potatoes are golden. About 5-8 minutes. 6. Garnish with parsley and serve.
