C17 Honey Fruit Cake

Ingredients:

|200g/7oz self- raising flour |175g/6oz honey |

|110g/4oz butter |175g/6oz sultanas |

|2 medium eggs |110g/4oz. glace cherries (halved) |

You will also need a buttered circular cake tin, 16.5 -19.0 cm (6.5 – 7.5 inches) in diameter.

Preparation;

Preheat oven to 180°C/350°F /gas mark 4. Cream butter and honey together. Beat eggs well and add them alternately with sifted flour then fold in sultanas and cherries. A little milk may be added if necessary. Bake for approximately 1.5 hours. Timing is for conventional ovens and is a guide only as appliances vary.

C18 Honey and Malt Wholemeal Loaf

Ingredients:

|1lb (454g) strong wholemeal flour |2oz (55g) fresh yeast |

|1 dessertspoon honey |1 level tsp (5ml) sea salt |

|1 dessertspoon malt |¾ oz (20g) vegetable lard |

|1 200mg Vitamin C tablet (crushed) |7 fl.oz (200ml) warm water |

You will need 2 greased 1 lb (454g) loaf tins.

Preparation:

Mix the yeast, malt, crushed Vitamin C and honey and add the warm water. Thoroughly mix. Rub the lard into the flour and add the salt, mixing in thoroughly. Make a well in the flour and add the liquid, mixing well. Knead the dough until smooth and elastic, adjusting flour or water to get a good consistency. Halve the dough between the two tins, it will tend to rise more in the middle so avoid tapered ends. Allow to rise in a warm place until the crest of each dome is higher than the tin. Preheat the oven to 450F (230C).

Bake for 35 minutes checking after 20 minutes that the top is not browning too quickly, turn down heat if it is. Loaves are ready when they turn out of the tin easily and sound hollow when tapped on the bottom.

NOTE: If fresh yeast is not available use dried yeast according to directions on the packet. Vitamin C is a nutrient that helps the yeast raise the bread, but it is not essential.

|2oz (55g) honey |Pinch of salt |

|You will also need a warmed 454g / 1lb jar. | |
