No-Bake Chocolate Cookies (with easy GF and dairy-free options)Bring to a boil in a large heavy pot:2 Cup Sugar (substitute with coconut sugar)? Cup Butter (or coconut oil)? Cup Milk (or coconut milk from can)? Cup Cocoa powder Dash of saltWhen it reaches a rolling boil that you can’t stir down, time one full minute. Remove from burner and stir in:1 tsp. Vanilla1 Tbsp Peanut butter (or almond or other nut butter)3 Cups Oatmeal (or coconut flakes and/or chopped nuts.)Spoon them onto parchment paper and let them cool. You should definitely eat at least one with a spoon while they’re warm.These were so quick and easy that I didn’t even have time to take a picture during the process. The original recipe came from a dear friend’s Grandmother (thank you Mo’s grandma!) and they taste just as good with all the substitutions.
