PIATELLI CONCESSION STAND PROCEDURES

OPENING

• Arrive ½ hour prior to game start. Unlock the concession stand door and the girls’ and boys’ bathrooms.

• Unlock the exterior window bars, open and secure at the bottom corners with metal rings. (Extras in the drawer underneath the microwave). Roll up the window. Place the blue metal cover (next to the refrigerator) on the counter, wipe clean. Place condiments, straws, and napkins on counter. Back up supplies for these items are on the shelves above the microwave.

• Hot Dog Steamer: assemble and fill with water using the empty gallon jug in the sink (1 ½ gallons will last 2 hours or ~ 1 game). Plug in (the outlet is hanging from the ceiling) and turn on High; Power button will expose red when in the ON position.

Hot dogs in the refrigerator, rolls in the bin under the island. Microwave hot dogs before putting in the steamer (3 minutes for 2 packs of 8). Hot dogs go in the right side of the steamer and need to be steamed 20-30 minutes at start, once the steamer is hot and steamy 15-20 minutes is enough. Use gloves or tongs when handling hot dogs and rolls. Do not store hot dog rolls on top of the freezer, the heat from the freezer makes them stale and hard.

• Candy: Replenish anything that is low. Extra stock in the drawers underneath the candy shelves. Fill the chip bin. Extra chips on shelves next to the Slush Machine.

GAME-TIME

• Hot Dogs: put in roll when hot, wrap in foil and place in left side (large side) of hot dog steamer. Gloves or tongs must be used when handling hot dogs until they are wrapped in foil. Keep an eye on the water level, the heating coils must always be covered with water or they will burn out. If you see excessive steam or there is a burning smell, then the water level is too low. Water can be added at any time, just pour in the left hand side, use empty plastic gallon jug in sink to fill. Even if there are hot dogs already in the steamer it’s OK to add water, pour it right on top of the dogs, they are already wet from the steam. Extra rolls are on the shelf next to the freezer, left side of the window. Aluminum foil wraps and gloves are in the drawer underneath the hot dog steamer. If you run out of hotdogs, you can order pizzas from Pat’s Pizza (617) 298-2222 and pay out of the cash box. Put the receipt in the cash box under the drawer.

• Slush: syrup goes in cup first (1 shot for a small, 2 shots for a large), then fill with slush mix, cap and give to customer with a straw. It’s important to watch the slush mix gauge and fill with diluted slush mix as the level drops. If the level drops too low, the slush will freeze. When the machine is full, the gauge is all white, when the machine is empty the gauge is clear. The diluted slush mix is in the refrigerator on the bottom, right hand side. To prepare diluted slush mix: add Neutral Base Concentrate up to the first line near the bottom of the jug, then add water up to the line near the top of the jug. Store diluted slush mix in the refrigerator. Try and rotate the cold diluted slush to the front. Do not discard empty slush mix jugs. Leave empty jugs in the sink. Refill and return to the refrigerator when business is slow.

Extra slush cups and caps are on the shelves above the Slush Machine. Extra syrup and Neutral Base Concentrate are on the shelves next to the Slush Machine. Back-up syrup and concentrate is in the storage area in the shed, the key on the key ring (labeled “storage”) to unlock.

IMPORTANT: THE SLUSH MACHINE STAYS ON 24/7. NEVER POWER OFF!

• Popcorn: remove plastic wrap, unfold and microwave using the Popcorn Button. If the bag does not turn in the microwave it may burn in stops. If this happens, discard and make the customer another one. Popcorn is stored on the shelf above the microwave.

• Pretzels: ask the customer if they want salt. If yes, remove the pretzel from the freezer with gloved hand or tongs and run briefly under the faucet. Place on paper plate and sprinkle with salt. Microwave 1 minute and 30 seconds. No need to wet the pretzel if the customer does not want salt. Extra salt packets are on the shelf above the microwave. Must use tongs or wear gloves when handling pretzels.

• Hot Chocolate: Place cup on driptray. Place a hot chocolate k-cup in Keurig. Press appropriate cup size

• Coffee: Place cup on driptray. Place a coffee k-cup in Keurig. Press appropriate cup size. Place tray with stirrers, sugar, and creamer on counter.

• Candy and Gum: keep one box of each type in display rack. Extra stock is in the drawers. Extra chips are stored on the shelves next to the Slush Machine.

• Water, Gatorade, Lemonade, and Soda: extra stock is in the locked gate area in the storage shed. The keys to both the shed and the gate area are on the key ring. Please keep the refrigerator fully stocked.

• Ice Cream: items available for sale in boxes on freezer shelves. Ronnie’s Frozen Slush is on the door, spoons are on the top shelf.

UMPIRES

The concession stand has the money to pay the umpires. The treasurer provides the cash in envelopes which are kept in the cash box underneath the money drawer. The umpires will come to the window and ask to be paid. There are three different levels, ask which game they umpired and pay them out of the appropriate envelope. The ump should write his/her name and the date on the outside of the envelope. Pee Wee umps are paid $20, Major and AAA (Minor) League umps are paid $30, and Franklin is paid $40 per game. All this information is written on each envelope. If there is not enough cash, pay them out of the cash box and note this on the envelope. The majority of umpires are middle and high school students; Franklin is currently the only professional adult umpire.

SCOREBOARD VOLUNTEERS

The volunteers are reimbursed for their time by allowing them to choose any one item from the concession stand at game end.

CLOSING

• Hot Dog Steamer: approximately ½ hour before the game ends, remove all hot dogs, wrap in foil and set aside on a paper plate. If they do not sell, give away or discard. Unplug the steamer. Disassemble (be careful, the metal parts are hot and it’s easy to let the glass sides fall into the machine and break), wash all parts in sink with hot, soapy water. Rinse and allow to drip dry in strainer. Empty residual water from steamer into sink, rinse, and place back on the island.

• Island and microwave counter: Wipe down island and microwave counters with disinfectant wipes which are stored on the shelves above the utility sink.

• Girls’ and Boys’ bathrooms: Wearing gloves, wipe down sink and toilet with disinfectant wipes which are stored in the snack shack on the shelves above the utility sink. Sweep and empty trash. Turn out light and lock door.

• Window counter: Remove the blue metal cover from the counter and place next to the refrigerator. Lock the exterior window bars. Roll down the window. Break down any boxes and put trash in the dumpster. Turn out light and lock door (2 locks).

• Storage shed: Make sure that lights are off in shed and that the shed is locked.
