Feel free to use leftover rice from last night's takeout. The secret to good fried rice is starting with cold cooked grains. May add cooked meats and veggies to complete the meal!

Ingredients
• 2 tablespoons canola oil or vegetable oil
• 2 eggs, beaten
• 1 bunch green onions or scallions, roughly chopped
• 3 cups cold cooked white or brown rice
• 4 tablespoons soy sauce
• 4 tablespoons water
• Salt and pepper to taste

Preparation
1._______________ In a saute pan, heat 1 tablespoon of the oil over medium-high heat.
2. ________________Whisk eggs in small bowl.
___________________ chop green onions. Add eggs and onions to hot oil. Cook, breaking up the eggs with a spoon until they are lightly browned.
