PANCAKES

Ingredients

1 c. flour 1c. milk

2 t. baking powder 2 T. oil

1 T. sugar 1 egg

½ t. salt

Directions

1. Place flour, sugar, baking powder, and salt in a mixing bowl.

Mix well with a wire whisk.

2. In a custard cup, beat the egg with a fork.

3. Add the egg, oil, and milk to the flour mixture.

4. Mix all the ingredients together gently with the whisk.

5. Avoid over mixing.

Standing

The batter may be used immediately, but is best if allowed to

stand for 1 – 2 minutes. Batter will thicken with standing.

To heat griddle

1. Turn on heat to medium or medium high. When griddle is

slightly warm coat lightly with cooking spray. This should

not again be necessary during the session.

2. The griddle should never smoke. If it does, turn heat down

immediately.

To make

1. Select a spoon or measuring cup with a 3 tablespoon capacity,

or slightly more. (try 1/4c dry measure)

2. Cook three or four pancakes at a time.

3. Flip pancakes with a pancake turner when the top side is filled

with popped bubbles and the undersurface is golden brown.

On top

1. Melted butter and maple syrup are the classics.

2. Top with your favorite fruit, such as strawberries or blueberries,

with whipped cream, or yogurt.

Variations Try chocolate chip pancakes!!
