INTRODUCTION

Thanks for grabbing a copy of my e-book. This book consists of the 25 of the most popular recipes from my blog, Running on Real Food. I started Running on Real Food in 2013 and over the years I've grown quite the collection of recipes. It was really hard to narrow it down to just 25!

I started Running on Real Food as a place to share my experiences with healthy living. Over the years it became more about the food and less about my personal life but the two really go hand-in-hand because I love to eat!

My aim when I started the blog was to show people how easy it is to cook with whole food ingredients, hence the name Running on Real Food. It's not about running but rather how to fuel yourself with real food and just how healthy and delicious that can be.

All the recipes on the blog are 100% plant-based and can be made gluten-free. My recipes tend to be very simple because that's how I like to cook. I don't like long ingredients lists, fancy equipment or hard-to-find items, so you'll find my recipes to be approachable and accessible to anyone who wants to try them. I love showing that eating a plant-based diet can not only taste amazing but can be easy and afforable too.

This is just a small sampling of what's on the blog. I went by the most-made recipes but there are hundreds more that are some of my favourite meals. From kale caesar salad with roasted chickpeas, to baked tofu brown rice bowls with satay sauce, tahini caramel cups and roasted beet kale salad I hope you'll head over to the blog for more simple and delicious meal inspiration.

SPICY VEGAN BLACK BEAN SOUP

yield: 6 servings

1 heaping cup diced onion (160 g, approx. 1 small or 1/2 a large)

1 heaping cup peeled and diced carrot (160 g, approx. 2 medium)

1 diced green pepper

1 cup chopped celery (150 g, approx. 3 ribs)

1/2 a jalapeno, de-seeded and minced3 cloves garlic, minced

2 tsp each cumin, oregano and chili powder

3-4 cups vegetable broth (start with 3 cups, add a bit if it seems to thick)

1 cup (250 mL) tomato sauce

1 19 oz can black beans, drained and rinsed (330 g, about 2 cups cooked)

1/2 cup finely chopped cilantro

salt and pepper, to taste

squeeze of fresh lime juice

This spicy vegan black bean soup is easy to make, incredibly filling and satisfying and has just the right amount of spiciness. It's made with simple ingredients like onion, garlic, carrot, tomato sauce and black beans but is full of flavour and nutrition. Add some avocado to that and you've got a perfect meal in a bowl.

INSTRUCTIONS

Add the onion, carrot, celery, garlic and bell pepper to a soup pot with a bit of the vegetable broth and cook for 5-10 minutes until starting to soften. Stir in the spices and cook for a few more minutes. Add the broth, tomato sauce and black beans and simmer lightly until the carrots are tender, about 15 minutes. Scoop half of the soup into a blender and puree until very smooth. Pour it back into the pot and stir in the cilantro. Season with salt and pepper and add a squeeze of fresh lime juice, if desired.

NOTES

Start with 3 cups of vegetable broth and add a bit more if it seems to thick, it just depends on the exact amount of veggies you use and how thick you want your soup.
