Cranberries

SELECTION: ? Fresh cranberries are seasonal and peak during the fall from October through December but they can be found year

round as dried fruit, jams, juice, frozen, or canned for convenience during the holiday season. ? When shopping for fresh cranberries, look for bright red colors with smooth, firm skins. ? Avoid soft or discolored fresh cranberries to prevent the spread of spoilage.

STORAGE: ? Rinse fresh cranberries in a colander under a steady stream of water and remove any stems or soft or wrinkled berries. ? Inspect the fruit for any brown or soft spots before freezing or refrigerating cranberries. Cranberries can be refrigerated

for up to two months or frozen for as long as one year. ? After rinsing the cranberries, dry them well to remove moisture and store in the refrigerator or freezer in

an airtight container.

NUTRITION/HEALTH/WELLNESS: ? One cup of cranberries contain only 46 calories. ? Cranberries and their skins are an excellent source of antioxidants. Antioxidants found in

Maple Cranberry Sauce

Source: Defense Commissary Agency

Ingredients: 4 servings

? 12 oz. cranberries ? 1 cup 100% cranberry juice ? 1 cup 100% pure maple syrup ? 1 whole lemon, zested and juiced

Directions:

1. Pour all the ingredients in a medium-sized saucepan and bring it to a boil.

2. Once at a rolling boil, turn the heat down to medium-low and cook for about 10 more minutes until the sauce thickens. Stir occasionally.

Notes:

? Use cup honey or brown sugar instead of the maple syrup.

? Swap the lemon for a lime or even ? an orange.

? Store the extra cranberry sauce in the fridge for up to 3 days.

? Use it as a snack by spreading some cream cheese on whole wheat crackers and topping with a dab of the sauce.
