Dairying, the most important agricultural enterprise in New York

State, accounted for approximately 50 percent of the farm cash receipts

Y in 1964. During that year, Nevi York dairy plants received nearly 10

billion pounds of milk of which 4.4 billion pounds were used in the

manufacturing of various dairy products. The prnduction of frozen

desserts accounted for 1.1 billion pounds, or 11 percent of the total

receipts ,?J

New York State consistently has ranked among the top three states

in the production of all frozen dairy products. In 1964, it ranked third,

with a total production of 85 million gallons, or 8 percent of the national

l I output of all frozen dairy products. New York ranked first in hard

ice cream production, second in soft ice cream production, twenty-fourth
