Coffee originated in the highlands of Ethiopia around the 9th century. Legend says that shepherds were the first to observe the influences of caffeine when their goats began to "dance" after eating the small red fruits growing on wild coffee trees. The story says a goat herder named

Kaldi then ate some of the berries and quickly felt energized. The seeds inside coffee cherries are what we commonly refer to as coffee beans. And today we know that coffee not only helps clear the mind and perk up the energy, but it also provides more healthful antioxidants than any other food or beverage in the American diet.

What is Kopi Luak? It's the most rare and expensive coffee in the world. It sells for up to $600 per pound (or on a cafe

menu as high as $50 per cup). The way it's made will astonish you. It starts in Indonesia, where an animal, called a palm civet, is fed coffee cherries. The undigested coffee beans pass through and come out in its excrement. Unbelievably the beans are then picked out of the droppings, washed, and sold. It is thought that enzymes in the stomach of the palm civet add to the coffee's flavor by breaking down the proteins that give coffee its bitter taste.

What are peaberries, and why are they desirable? The normal development of the coffee cherry creates two seeds, which grow with their flat sides facing each other. A peaberry is a round bean that's formed when only one half of the coffee bean develops inside the fruit. Some argue they are more desirable because they have a richer, more concentrated flavor than normal beans. How much coffee does one tree produce in a year? One coffee... OVER...

CONTINUED... tree produces only about one pound of coffee per year! In fact, after flowering can take up to 9 months before coffee cherries are ready... just like a human baby!

It's fascinating to learn that although unroasted beans contain all of coffee's acids, protein, and caffeine -- they have none of its taste. Controlled and careful roasting sparks a complicated series of chemical reactions turning carbohydrates and fats into aromatic oils and unlocking the characteristic coffee flavor. And isn't it interest that the same could be said for us... our greatest leaps in self awareness and personal growth occur when the heat is on--in other words, when we are challenged, confronted, and tested.

For example, you probably consider yourself to be a good person. Most people do. But turn the heat up a little by asking yourself if you'd be a "good person" according to God's standard--the Ten Commandments.

Does God consider you to be a "good person"? Here's a quick quiz you can take to find out: Have you ever committed blasphemy (using God's name in vain for example, "Oh my G-d!")? Have you ever felt hatred towards anyone? (God says that is equal to the sin of murder - 1 John 3:15.) Have you ever had sexual thoughts about someone you're not married to? (Jesus said that God considers that to be equal to the sin of adultery - Matthew 5:28.) How many times have you told lies in your life? (God says that "all liars will have their part in the lake of fire" - Revelation 21:8.)

We've only looked at four of the Ten Commandments, and it should be pretty clear already that God doesn't consider any of us to be "good people." In fact , the Bible says in many places that there is no one good, except God alone (Psalm 53:1, Mark 10:18, Luke 18:19, Romans 3:12). Do you feel the heat? We know this process is unpleasant, but it's very necessary. You see, we all have to face a Holy God on Judgment Day. He has a record of every wrong you've ever committed, in thought, word, or deed. This is the teach-

ing of the Bible--that God will "by no ers unable or unwilling to purchase true

means clear the guilty," (Numbers 14:18). Mocha coffee began adding small quan-

12:14). And "God is angry with the wicked every day," (Psalm 7:11).

Now, here's the amazing part. Al-
