Cooking white rice: One cup of uncooked rice equals 3 cups of cooked rice, or four servings. Bring 2 cups of water and 1 teaspoon of salt to boil. Add 1 cup of uncooked rice; stir once or twice and return to boil. Reduce heat; cover and simmer. Cook about 20 minutes without removing lid or stirring, or until liquid is absorbed and rice is tender. ................
