BAKING POWDER BISCUITS
RED LOBSTER BISCUITS
1/3 cup shortening
1 3/4 cup flour
2 1/2 teaspoon baking powder
3/4 teaspoon salt
3/4 cup milk
1/2 cup cheddar cheese -- shredded
1/4 cup margarine or butter -- melted
1/4 teaspoon garlic powder
1. HEAT OVEN TO 450 DEGREES.
2. CUT SHORTENING INTO FLOUR, BAKING POWDER, CHEESE, AND SALT WITH PASTRY BLENDER UNTIL MIXTURE RESEMBLES FINE CRUMBS.
3. STIR IN JUST ENOUGH MILK SO DOUGH LEAVES SIDE OF BOWL AND ROUNDS UP INTO A BALL. (TOO MUCH MILK MAKES DOUGH STICKY; NOT ENOUGH MAKES BISCUITS DRY.)
4. TURN DOUGH ONTO LIGHTLY FLOURED SURFACE. KNEAD LIGHTLY 10 TIMES.
5. ROLL 1/2 INCH THICK.
6. CUT INTO BISCUITS (ROUND OR SQUARE).
7. PLACE ON UNGREASED BAKING SHEET ABOUT 1 INCH APART FOR CRUSTY SIDES; TOUCHING FOR SOFT SIDES.
8. BAKE UNTIL GOLDEN BROWN, 10 TO 12 MINUTES. IMMEDIATELY REMOVE FROM BAKING SHEET.
9. MIX MARGARINE AND GARLIC POWDER; BRUSH OVER WARM BISCUITS
