Spiced and Iced Pumpkin Cookies

__________Preheat oven to 375^.

__________Line 1 baking sheet with aluminum foil, spray with non-stick spray.

DO NOT DUMP INGREDIENTS IN BOWL YET!

MEASURE FIRST, THEN SET ASIDE UNTIL NEEDED!

• __________1/2 cup softened margarine

• __________1/4 cup granulated sugar

• __________1/4 cup packed brown sugar

• __________1/4 teaspoon baking powder

• __________1/4 teaspoon baking soda

• __________1 egg

• __________1/2 cup canned pumpkin pie mix

__________1 + 1/4 cups all-purpose flour (sifted first)

__________1. Use electric mixer to cream margarine, white sugar, and brown sugar until smooth.

__________2. Add baking powder and baking soda. Beat 30 seconds, scraping sides of bowl.

__________3. Use electric mixer to beat in the egg and pumpkin until well blended.

DO NOT USE ELECTRIC MIXER FOR REST OF COOKIE RECIPE.

__________4. Use mixing SPOON, NOT ELECTRIC MIXER, to stir in flour until blended thoroughly.

__________5. Use teaspoons to drop dough about 2 inches apart onto cookie sheet.

__________6. Bake cookies for 10-12 minutes until edges are lightly browned and tops seem firm.

__________7. Transfer foil and cookies from baking pan to a wire rack; cool for 5 minutes

_________8. Spread cooled cookies with cream cheese frosting if desired.

CREAM CHEESE ICING:

__________2 Tablespoons soft margarine

__________1 cup powdered sugar (DO NOT PACK DOWN INTO CUP)

__________2 ½ oz. softened cream cheese

__________Use electric mixer to beat the icing ingredients until smooth.
