Banana Bread
4-5 very ripe bananas
¾ cup honey, liquefied in microwave (30 seconds)
¼ cup light olive oil
2 teaspoons vanilla extract
2 cups whole-wheat pastry flower, sifted
2 teaspoons baking soda
¾ cup walnuts, chopped
1. Preheat oven to 350º F.
2. Mash the bananas thoroughly and mix with the honey, olive oil, and vanilla extract.
3. Mix separately the sifted flour, baking soda, and walnuts.
4. Blend the dry ingredients into the wet ones, stirring until just mixed.
5. Put the batter into a nonstick 8-inch-square baking pan and bake for 45-60 minutes until a knife inserted in the center comes out clean. Remove from oven, let cool slightly, and remove from pan.
