Breakfast: 

Muffin Recipe

Topping

Oats ¼ cup

Brown sugar 1 tbsp

Butter, melted 1 tbsp

Ground cinnamon 1/8 tsp

Muffin

Oats 1 ½ cups

All-Purpose Flour 1 ¼ Cups

Baking powder 1 tsp

Baking soda ¾ tsp

Ground cinnamon ¾ tsp

Unsweetened applesauce 1 cup

Fat-free milk ½ cup

Vegetable oil 3 tbsp

Large egg white, lightly beaten 1

Instructions

Heat oven to 400 degrees F. Line muffin tins with muffin cups.

For topping, combine all ingredients in small bowl; mix well. Set aside.

For muffins, combine oats, flour, baking powder, baking soda and cinnamon in large bowl; mix well.

In medium bowl, combine applesauce, milk, sugar, oil, and egg white; blend well.

Add to dry ingredients all at once; stir just until dry ingredients are moistened.

Fill muffin cups almost full. Sprinkle with topping.

Bake 20-22 minutes or until deep golden brown.

Fruity Banana Smoothie

6-8 oz plain yogurt

1/2 banana

1 c. frozen fruit

4-5 oz. plain soy milk

dash vanilla

1 tsp. honey

Lunch:

Flax Tuna Wraps

flaked tuna

flax tortillas

spinach

tomato

pepper

cheese

green onion

pickle

plain yogurt

salsa

Dinner:

Vegetarian Chili

Onion, chopped 1

Variety of Vegetables

Green Pepper

Yellow Pepper

Orange Pepper

Zucchini

Mushrooms

Carrots

Parsnips

Diced Tomatoes 1 can

Fresh Tomatoes, Diced 5-6

Cooked Beans 2 Cups

Child Powder 1 ½ Tbsp

Ground Cumin 2 Tbsp

Black Pepper To taste

Cocoa 1 Tbsp

Instructions

Saute onion in oil. Add all vegetables except for the tomatoes. Saute until slightly soft. Add tomatoes, beans, and spices except cocoa. Stir. Simmer until veteables are soft for about 45 minutes. Stir occasionally. Add cocoa about 10 minutes before finished. Served over brown rice with plain yogurt for garnish.

Rice

Rice ½ Cup

Water 1 Cup

Salt 1/8 tsp

Instructions

Bring rice, water, and salt to boil over high heat in a saucepan with a tight fitting lid.

Cover, reduce heat to low and simmer, without lifting lid for 35-40 minutes.

Remove from heat without removing the lid and let stand for 5 minutes before serving.
