Close on thirty years ago, Perry Chaloner started experimenting with traditional jam recipes using the fruits that were flourishing on the 14-hectare farm: olives, plums, lemons, Seville oranges and herbs. Always retaining the best of ‘homemade’ tastes, Chaloner created quirky combinations and shared these special recipes with his friends: their response was overwhelming. And so, based on the finest farmgrown ingredients, slowly a range of innovative products developed. The CHALONER brand was born. Singular in flavour the family have been hard at work establishing the CHALONER brand consisting of their signature range of award winning Olive Oils and hand-crafted olive products, marmalades, preserves and sauces. CHALONER products are the perfect accompaniment to any spread or meal, and can be enjoyed with a clear conscience.Ninety percent of South Africa’s olives are grown in the Western Cape – its typically Mediterranean climate being perfect for this type of crop – and Stellenbosch is better suited to olives than many other crops. Olives are heat tolerant and are eco-friendly in that they require far less water to survive than deciduous fruit. Using fresh produce CHALONER products are made primarily from organically fertilised orchards, are free of preservatives and colourants, and products should be refrigerated after opening. There is no ingredient ‘substitution’ and all ingredients are sourced, as far as possible, locally – and always from sources renown for quality. The fruit is meticulously grown in organically fertilized orchards and harvested at optimum maturity to ensure the highest natural sugar content. OLIVE PRODUCTSBLACK OLIVES CHALONER’s Kalamata olives are carefully and slowly processed to ensure none of the olive flavour is lost whilst removing the bitterness. They are then hand-sorted and the best olives bottled in a brine of wine vinegar and sea salt. The range includes 5 different herb combinations to enhance the flavour. Strictly limited production.OLIVE MARMALADE made with Mission olives, unrefined sugar and specially selected herbs, this is one of the most popular in the product range. A must with pate or on any cheeseboard!OLIVE & CHILLI PRESERVE **BEST SELLER** a sweet olive jam with a citrus nose and chilli for that (medium) bite! Try it with smoked chicken and fish.A few years ago we invested in our own press and have been pressing our own EVOO to give us control from Tree to Table. Over the years we have made substantial investment in our storage and handling facilities to enable us to keep our oil in perfect condition for longer. We carefully pick and cold press within 24 hours and bottle each type of olive separately.CHALONER EXTRA VIRGIN OLIVE OIL Our Award winning oil is a careful blend of different cultivars of olives to create this superlative multifaceted Medium Oil . The olives are cold pressed within 24 hours to retain their delicate flavour. CHILLI INFUSED EXTRA VIRGIN OLIVE OIL A very mild extra virgin Kalamata Olive Oil is used as a base which has much more subtle flavours than more traditional Olive Oils. We infuse the Kalamata Oil with chillies to provide a distinctive chilli nose, mild flavour and after bite. We have tried to keep the chilli bite to a low to medium intensity and differs from other Chilli Oils as we use Extra Virgin Olive Oil as our base. Delicious drizzled on just about anything, but particularly chicken & pizzas.?LEMON INFUSED EXTRA VIRGIN OLIVE OIL We use a very delicate Olive Oil as the base for our Lemon Oil so the citrus notes are much more dominant than the natural grassiness of fresh extra virgin olive oil. Enhance any dish with the delicious oil!CHALONER SINGLE CULTIVARS EXTRA VIRGIN OLIVE OILWe currently grow 9 different cultivars many of which we now bottle as single varietals.NOCELLARA SINGLE CULTIVAR: The Queen of Olive Oils. Great aroma on the nose, good fruitiness on the palate followed by bitter & pepper of medium intensity which lingers magnificently.FAVOLOSA SINGLE CULTIVAR: Wonderful floral, spicy and grassy aromas with a ripe and nutty flavour.KALAMATA SINGLE CULTIVAR: A rare treat. Smooth and fruity, with notes of grass and a peppery finish.DELICATA SINGLE CULTIVAR: Our earliest cultivar with the most luxuriant nose. An intense oil with a dry very peppery finish that connoisseurs will love.LECCINO SINGLE CULTIVAR: Originating from Tuscany. A beautiful light and freshing oil with a slightly sweet and spicy flavour. A very approachable oil.?CORATINA SINGLE CULTIVAR: Distinctive and very full bodied. If you can afford to use a Premium Olive Oil for everyday cooking then this is the one.BARNEA SINGLE CULTIVAR: A difficult to grow Israeli variety with a sweet, nutty flavour. A delicate oil and a future favourite. We don’t think we can claim we have one of the largest selections of Single Cultivar EVOO but we can certainly stake a claim that we are one of the few estates that bottle Single Cultivar EVOO.BLACK OLIVE & SUNDRIED TOMATO TAPENADE kalamata olives, sundried tomatoes, gherkins, basil, wine vinegar, capers and garlic, less than 1% sugar, salt and pepper: serve on crostini made from thinly sliced leftover French bread drizzled with Extra Virgin Olive Oil and a sprinkle of sea salt then browned under a grill.TRADITIONAL TAPENADE depipped kalamata olives, olive oil, basil, capers, balsamic vinegar, garlic, sage, sugar, salt and pepper. It’s perfect as a topping to pasta – just add a spot of freshly ground Pecorino or Romano cheese. Child friendly as it doesn’t contain anchovies.GREEN OLIVE & ANCHOVY TAPENADE olive oil, capers, anchovies, wine vinegar, fennel seeds and balsamic vinegar. Ones without the tartness of locally available vinegars.PREMIUM RANGEAceto Balsamico di Modena IGPGOCCIA NERA has a density of 1.18.?It is a mature balsamic and the skill in the blending and ageing in oak and chestnut barrels results in a rounded sweet perfume with a delicate acidity. It’s the classic type of balsamic that people in Italy use with salads.? Its light and fresh. Taste: A pleasant hit of acidity, while maintaining a light balsamic sweetness. Versatile, great with raw and cooked vegetables, meats, cheeses, salads. Also amazing as a dip for freshly made warm crusty bread.??GOCCIA ORO is a? strong, full bodied, mature and balanced Balsamic Vinegar of Modena IGP with a high proportion of sweet cooked grape must and a small amount of wine vinegar.? Oro is noble with broad shoulders, it has been aged in oak, chestnut and cherry barrels. Thick and dense, pour some onto a spoon and it speaks for itself. Density 1.34 Taste: A perfectly balanced product. A great ‘all-rounder’ for the kitchen, use it with cooked and raw veg, risottos, beans and pulses, mature cheeses (especially pecorino), fish, beef, lamb and pork belly.?CONDIMENTO BIANCO We are not allowed to call this White Balsamic Vinegar but if we could we would. The result of a careful blend of cooked white trebbiano grape must, and fine white wine vinegar, aged in oak barrels. Density: 1.25 Taste: Delicate and balanced, refreshing yet mature and surprisingly sweet. It is commonly used for cooking white fish or crustaceans, especially as the meat isn’t discoloured. Good also for vinaigrettes and salads and also with breast of chicken. This vinegar is “the bomb”.STANDARD RANGERASPBERRY VINEGAR raspberries grown on the estate are mixed with premium quality wine vinegar and unrefined sugar to create this delicious product. Mix with olive oil, sugar, salt and pepper and drizzle this dressing over mashed potato. BALSAMIC VINEGAR rich and intense flavours. Perfect for drizzling over salads. CHILLI SAUCESWorking with top South African chef Bertus Basson we have created 2 fabulous Chilli Sauces.SWEET CHILLI SAUCE Our version of the classic sauce.
