Sterilize jam jars. Put jam jar lids into pan with water covering them, and put on stovetop to boil while

preparing the jam. (Keep an eye on these to make sure they don't boil dry. Add more water if necessary. Have tools like tongs, whisk, & hot pads handy and ready to use.

Method

1. Rinse fresh blackberries. *NOTE* Fresh blackberries must be used for this method. 2. Mash the fresh berries with a potato masher until there are no big chunks. 3. Measure out equal parts mashed berries and sugar. (Use between 4-6 cups mashed

berries for this method.) 4. Pour mashed berries into large saucepan and place on the stovetop over high heat. Stir

constantly until it boils. Boil for 3 minutes, stirring constantly. 5. Add sugar (the equal amount you measured in step 3) while stirring. 6. Bring to a boil again, stirring constantly. Boil for 3 minutes more. 7. Remove from heat and beat with a whisk for 3 minutes. (This whisking step is what

beats the natural pectin out of the berries and causes the jam to thicken and set.) 8. Pour into sterilized jars. (Pour just up to the narrow part of the jar.) 9. Using tongs, place a hot lid on each jar. Screw the rings on tightly. 10. Leave jars on counter to cool and listen for the "pop" of the sealing of the jar. Store in a

cool, dry location.
