Raspberry Coffee Cake

Serves 12

Bottom Layer:

1 1/3 cups flour

1 tsp. baking soda

1 tsp. cream of tartar

1/3 cup sugar

½ cup margarine, soft

1 egg

¼ cup raspberry jam

Preheat oven to 350 degrees.

Blend dry ingredients and mix in margarine and egg. Press dough on bottom and sides of 9” spring form pan. Spread jam over dough.

Topping:

½ cup butter

2/3 cup sugar

2 tbsp. flour

1 tsp. baking powder

1 tsp. almond extract

2 eggs

1 cup sliced almonds

Cream butter and sugar add flour and baking powder. Beat in almond etract and eggs. Fold in sliced almonds. Spoon topping over the jam.

Bake at 350 for 40-45 minutes, be careful not to over bake.
