This facility has two hundred beds to serve patients admitted for short stays. This hospital is located in a rural-suburban area of Buffalo, NY, situated near many local businesses as well as agriculture. The population whom resides in this area tend to fall within a middle-income range, and the majority are of Caucasian lineage. Families with middle-aged parents of grade school aged to teen-aged children seem to make up the highest population. Our medical center is dedicated to the needs of our patients and is always seeking to ensure the highest satisfaction and pleasure of those requiring our services. The food services department holds a monthly meeting to discuss patient feedback, areas to improve, and the upcoming menu in order to best serve the patients and meet their goal. This is best described as achieving the highest satisfaction rates, providing meals that meet nutritional needs while also serving as a source of joy and comfort during their stay. After many years of evaluating patient comments, the ideal food selections have proven to be those that are familiar and traditional. The menu is somewhat simple in order to have the most flexibility in accommodating the special needs of certain patients. Additionally, with the exception of a pre-packaged individual, sealed peanut butter, this facility does not use any nut products within their dishes so as not to trigger any nut allergies. The food services staff really enjoy to match the monthly menu offerings with the season. As the fall leaves have made their debut, the October menu features many autumn-inspired entrees, side dishes, and desserts. The kitchen is made up of six staff on at all times, including a head chef. The staff rotates throughout the day in three shifts which generally last about six hours to accommodate breakfast, lunch, and dinner. There is a large walk-in cooler for storing bulk items, a small walk-in freezer, two smaller fridges for prepared foods, two stoves, two large ovens, a large warming table, a prep table, a dish-washing system, a pantry area for dry food goods, and a closet for cleaning and paper supplies. The kitchen is fairly decent sized which makes food preparation and organization much easier. All of the staff have high work ethic and strive to ensure that food is prepared in the highest standards of cleanliness and safety. Budgetary restraints have been an issue in the past. Cuts are continually being made all over the hospital. Fortunately, we have a team who can think on their feet in coming up with cost-saving solutions that do not sacrifice quality and acceptability. We made a switch from providing mostly fresh fruits and vegetables to frozen and canned options. While it is not ideal, the patients still seem to enjoy these items. We offer many items that can be prepared in larger quantities ahead of time such as chili, meatloaf, lasagna, etc which decreases the number of staff needed on at one time.
