Classroom Directions for Snack PreparationDuring the lesson have the classroom teacher spoon rainbow pasta salad into 3 oz. pill cups or if on plates, approximately ? cup serving size, making sure each serving has a good variety of vegetables. After students have washed hands have them sit in a circle on the floor. Choose 2 student helpers to pass out napkins and forks while you or the classroom teacher passes out the snack.Point out that as a class, they are a type of family too. They eat lunch together every day at school! Encourage the students to have a “family” discussion talking about:Things they like to do.What makes them happy?What is their favorite physical activity?What is their favorite thing they liked about nutrition class?For 45 – 60 minute lessonPreparation Before the ClassroomWash and chop vegetables and place in a container with a tight-fitting lid. Each color should have its own container. Cook pasta or quinoa according package directions. Each student will place a bag of colored veggies in the bowl with the pasta. As the student is doing that, ask the class what other veggies come in that color. Continue to do this until all the ingredients are in the bowl. Pour about ? cup of salad dressing in the pasta/veggie mix and stir. While portioning pasta salad into cups or plates, have your helpers pass out napkins and forks and have the entire class sit in a circle on the floor.The classroom teacher can help pass out the snack.
