BREAKFAST, LUNCH OR DINNER PORTFOLIO

This activity is a culmination of the many things we have learned in Family and Consumer Science such as: food safety and sanitation, kitchen math, kitchen utensils, food etiquette, food preparation skills and information on USDA guidelines. Your objective is to develop a breakfast, lunch or dinner menu and create a portfolio based on the following requirements below. The meal will be prepared at home. You will be given some class time to plan your meal and work on your portfolio however the majority will be done on your own. Your grade will be based on the assessment sheet you have been given.

First and foremost, have fun with this activity!

Portfolio

• You will be working on your portfolio on your own time and in class when in between module rotations.

• Your final portfolio must be 8 1/2 x 11 inches.

• You will be creating word documents and may use clip-art and word-art for color. (You may not go to GOOGLE Images).

• Research information can be obtained from: and .

• Log in with your student Identification number.

• Using websites and other information create your menu. (You may prepare a family favorite, just make sure that you obtain all recipe information).

• You must select foods from each category of My Plate.

Your portfolio will include all of the following:

1. Cover Sheet.

2. List of entire menu.

3. All ingredients and directions for each dish.

4. Shopping List: List of all ingredients required for recipes. (Develop a shopping list by taking inventory of what you have and what you need to purchase.)

5. Food Preparation safety check list (provided).**

6. Table place setting appropriate for foods being served.

7. Date and time served, guests in attendance.

8. Completed “My Plate”(provided).**

9. Assessment information.**

** Forms included in this packet must be completed and turned in with Portfolio.

Food Preparation

• Purchase ingredients.

• Effectively plan time needed to prepare food and clean up.

• Consider place setting based on food choices.

• Follow food preparation check list.

• Complete parent or guardian evaluation and have signed.

Please remember to carefully plan your meal including “myplate” requirements. It is not necessary for your parents to spend too much money, plan your meal according to your budget.
