Refreshing Anti-Inflammatory Salad

Ingredients 2 handfuls, 1 handful, Arugula 1 handful of Parsley, chopped 1 cucumber, diced 2 Medium tomatoes, diced 1/2 medium Red Pepper, sliced

Directions 1. Mix all the greens together in a bowl 2. Mix in cucumber, red pepper and tomatoes 3. Sprinkle seaweed 4. Serve with Salad Dressing (recipe found below). Dressing can be poured on the salad.

Dressing Ingredients 1/2 cup Olive Oil 1/4 cup Coconut Oil 1/3 cup lemon juice 1 - 3 cloves Garlic, minced 1/4 tsp. Himalayan Salt

Dressing Preparation 1. Mix all above ingredients in a bowl 2. Taste and add more of any of the ingredients to your taste
