Remove excess fat and shred. Tomatillo DressingIngredients:1 package ranch mix1 cup buttermilk1 cup mayo1 tomatillo, chopped1 clove garlic1/2 bunch cilantrojuice of 1 lime1/2 jalapeno, seeds removed and choppedBlend all ingredients together until smooth. Black Beans3 cans beans3 cups tomato juice1 tsp each garlic powder, cumin, oregano1. Rinse beans thoroughly. 2. Combine all ingredients in large pot and simmer gently for at least 20 minutes.Cilantro Lime RiceIngredients:2 cups rice1/2 tsp cumin1 ? tsp salt2 T dehydrated onion1 tsp sugarjuice of 1 lime 4 cups boiling water cilantro1. Preheat oven to 425.2. Grease 9x13 pan and combine all ingredients in pan. You can also use a disposable aluminum pan with a tight fitting lid. 4. Pour boiling water in pan, stir gently. Cover tightly with foil. (Or use lid, seal edges tightly.)5. Bake for 20 minutes. Take out of the oven and leave lid on for several minutes to ensure the rice absorbs all the water. 6. Stir in chopped cilantro and more lime and salt to taste before serving. ................
