APPLE AND BROWN RICE PILAF. 1/2 onion, minced. 1 T vegetable oil. 1 1/2 C quick cooking brown rice. 1 1/4 C low sodium chicken broth. 1/2 t dried thyme, crushed. salt and pepper to taste. 2 C Golden Delicious apples, cored and diced. 2 T parsley, chopped.
