Heat 2 teaspoons oil in a wok or large frying pan until it is smoking hot. Add the chicken and stir fry for 5 mins until browned. Add the cashews and ginger and stir fry for a further couple of minutes until the nuts are golden and toasted. Remove the chicken, nuts and ginger from the wok and set aside. ................
