CLASS PROGRAMME

HANDS ON BBQ PARTICIPATION CLASSES

These classes proved to be very popular in our 2009 programme. A substantial luncheon and wines are included in addition to the recipes; class size is limited t a small number under the personal instruction of Beverley, representing great fun and value. If you have a gift voucher, please mention this when making your booking and bring the form with you on the day.

BARBECUE COOKING (1)

Prepare a range of marinated meat, fish, poultry with different techniques as diverse as skewered orange lamb, individual foil packages of lemon grass and ginger prawn, basil chicken and more. Lots of fun working together, informative and suitable for any age group. After the hands on preparation, the food is cooked on the barbecue with accompaniments of salads and wines to match. Dessert is then served. Even if the weather is not kind, we have under cover facilities for cooking on the barbecue.

Classes commence either 10.30 or 11 am and usually finish about 2.30 to 3 pm.

BARBECUE COOKING SEAFOOD

Fish dishes, prawns and marinades along with some perfect accompaniments to these. It is very interactive and of course hands on. Perfect for anyone who loves fish but is not so creative about different ways to barbecue it.

Gift Certificates

Don’t know what to give that special person? Why not give them a Gift Certificate to one of our classes.

When booking please advise us you are using a gift certificate and this is sufficient to hold your booking for a class. Please bring the certificate with you to the lesson for redemption. A Single Class gift certificate can be used for any single lesson, or if you prefer, you can attend one of the two week class lessons. If you wished to attend both, an additional $75 is payable. Please send your payment - cheques made payable to Beverley Sutherland Smith, or nominate that a gift certificate is being used, to confirm your booking. You will be notified immediately if this date or booking is not available.

ASIAN SPECIALTIES (One Lesson) (HANDS ON NEW)

A selection of dishes from Vietnam and China. Learn to make the best baby spring rolls with dipping sauces. Prepare two kinds, the soft fresh rice paper rolls and crispy fried ones, stuff a little chicken with fragrant herbs such as lemon grass, ginger and coriander and then bake so it is crispy but moist and of course perfect rice is included along with a Chinese prawn dish.

A single lesson to celebrate Spring. It includes asparagus, lamb, baby peas and beans and of course a luscious dessert.

MINI TARTS (Single Lesson) (NEW)

Tiny tarts made with a buttery, very easy to handle pastry that can be frozen. It is filled with a number of interesting fillings such as raspberry and white chocolate swirl, passionfruit meringue and berries on custard. Perfect for dessert or made as mini tarts to use for petit fours on a special occasion.

SPANISH TAPAS (One lesson) (HANDS ON NEW)

Spanish food has come to the forefront after their win in the World Cup but for years Spanish food has been acclaimed as some of the most creative and tasty. This is a lesson on their delicious and interesting little tapas dishes. Dishes that are perfect for summer entertaining either as finger food or part of a buffet. You will cook them in a group and eat with a tasting of Spanish sherry and wine.

FINGER FOOD (Single Lesson) (NEW)

Still enormously popular, finger food parties are easy entertaining and we like to give you recipes you can prepare in advance, whether it be for ideas before a dinner or a complete night of finger food. One of our popular is a layered mould, green, red and cream with loads of flavour. This dish is a fantastic to prepare in advance - you could use it for your Christmas parties.

Food to freeze, store and enjoy from the cupboard. An orange aperitif base that keeps for months, a Pecan nut pate and a honey and pink peppercorn mustard are just some of the ideas.

Even without a date we already have bookings for this, the most popular lesson we ever do throughout the year. Again food that can be prepared in advance for a fabulous Christmas lunch, dinner or just a party. It will feature a first course, main dish with vegetables and dessert.

SPECIAL EVENTS

• BUSY LIFE OF A BEE

Earlier this year we held a one special day with Brendan White for the Australian Garden Scheme. Brendan is an enthusiastic beekeeper and I now have a bee hive in my front garden which he placed there. You do not have to want to keep bees to enjoy this day. Bees are fascinating creatures and Brendan will tell you the story of a day in the life of the bee, followed by a lovely honey based lunch served with a complimentary glass of wine. We shall also supply some honey recipes to take home.

Brendan’s garden honey will be available on the day at $6 a jar and it is really fabulous

• OPEN GARDEN SCHEME

Once again my garden will be open as part of the Australian Garden Scheme on Saturday 16 & Sunday 17 October, 10 am till 4.00 pm. Entry fee $5. Not only will you be able to stroll through the garden but also stop for morning/afternoon tea or a light luncheon or purchase some of my produce and cooking books.

CHRISTMAS PRODUCE SHOP

Beverley’s Christmas Produce Shop will be open:

• Saturday December 11 and

• Sunday December 12

from 10.00 am until 4.00 pm or by appointment at any time before Christmas. A list of produce will appear on the web site (.au) nearer the time.

Terms & Conditions For Booking Classes:

We can take telephone bookings or fill out the enclosed form and either post or fax. Payment is required in advance before each class and is non refundable. Should you be unable to attend, you may transfer to another class provided 10 days notice is given.

If cancellation is within the 10 days, you can ask for a refund. Or if something should happen and you cannot attend you can always send a substitute person on the day. If you are unable to do this, we will provide you with a copy of the recipes from the lesson.

The Cooking School, which becomes a garden room for functions and the beautiful Conservatory are proving popular for birthdays, parties, special anniversaries, corporate functions, charity fundraisers, AGM’s and small wedding parties. You and your guests will have the room completely to yourself when you book.

Start your function with champagne cocktail by the pool, or in the conservatory. It is a unique setting and gives an opportunity for speeches in private without obtrusive background noise as so often happens in restaurants. And of course, delicious catering by Beverley with a menu of your choice.
