June 2017Rockport Country Club - SandpiperThoughts from the PresidentJon HeffronThis month I write about RCC's SERVICE CHARGE POLICY.RCC's policy and practice is that all food and beverage sales to members and guests incur a 16% service charge.?This service charge is NOT a tip or gratuity for our servers or bartenders.?At RCC, our servers and bartenders are paid a flat hourly rate (on average in excess of $10 per hour) that is substantially higher?than they would be paid at what is called a "cash house", where the servers and bartenders work for minimum wage (currently $2.13 per hour plus tips).?Service charge revenue is reported in the club financials as income to the Food and Beverage Department, and helps offset the total compensation and benefit expense of our servers and bartenders.A member might ask why would RCC want to compensate its servers and bartenders in this manner? This practice is a fairly common approach among clubs. Part of the thought process is that RCC pays higher hourly wages and does not promote or expect tipping in order?to prevent any favoritism from developing about which members get taken care of better (or worse) based on whether they are a big tipper or not. Another part of the thinking is that we want to reduce staff scheduling difficulties and staff turnover that result from one shift being more attractive financially to employees than another. I understand RCC used the "cash house" model (with tipping allowed in the discretion of the member or guest) in the past and decided to abandon the practice because the problems noted above occurred.What are you to do now that you know the service charge is NOT "leaving a tip"? ?The answer is completely up to you. Let me make it very clear – no one is required to leave a tip, either members or guests. ?Our servers and bartenders are compensated at higher hourly rates and some are eligible to receive benefits they might not receive at a "cash house". ?In the end, it is their choice to work here rather than a "cash house".That said, there are some members who do leave a cash tip and for that our servers and bartenders are grateful. ?There are other members who don't carry cash, and want to leave a tip too. To that end, RCC has an optional gratuity line on each ticket.?RCC put it there in response to members who want to tip, but who rarely carry cash or who feel uncomfortable handing servers cash in view of other members.?When an optional gratuity is filled in, it is charged to your account and then paid to that server or bartender when they receive their subsequent paycheck.This may be more than you ever wanted to know about the service charge and where it goes. ?If nothing else, I hope I’ve cleared the air about it for you. If any member has any further questions about the service charge they should contact our General Manager.?Thanks for your continued support!From the Desk of the GMRick DeLoachEarlier in May, I had sent out via email club Bullet Points to communicate a few items to the membership. Hopefully, you find these informative and a positive way to communicate important items to each of you. Below are a couple of the bullet points that I felt worth bringing to your attention again.Bullet Point – Swimming Pool UpdatesThe management team and the Board of Directors have agreed that for the summer of 2017 we will NOT employ lifeguards for the pool. Understanding that this is an important decision many clubs throughout the country have and are taking this approach. New signage for the pool area has been ordered and should be here soon to make sure that all members and guest understand this policy.It should also be noted that any member or private pool parties will be required to have a lifeguard on duty at the expense of the event.?Bullet Point – Hours of Operation Change in Food and BeverageAgain the Board and management team have decided to change the hours of operation in the Food and Beverage Department. While we believe this to be a minor change with minimal impact we expect to see some additional savings to the operation. Effective Thursday, June 1st these changes will go into effect:Tuesday – Friday and Sunday the Food and Beverage Operation will now Open at 10:00 AMSaturday – we will continue to open the bar area at 7:00 AMSunday Brunch will continue to open at 10:00 AM?We will continue to provide coffee, juice, soft drinks, fruit, cereal, in the morning but will offer it on an honor system until 10:00 AMAll other hours or operation will remain the sameGolf Course Maintenanceby John Zuniga?Days are longer, the temperature is warmer, and the grass s is “growing.” All good indications that summer will soon be here. This is great news for the golf course and to the maintenance team. This is the time of year when we can really make some good progress with turf conditions. Fertilizer applications have been made, pre-emergent/herbicides have been applied, irrigation is flowing, and mowing heights have been raised. Everything we need to help us grow a denser, healthier and greener turf. Unfortunately, this includes the unsightly and unwanted “weeds”, however we are addressing this issues and I am confident we will win the battle!?I would like to announce that six of the seven pieces of “new equipment have arrived on property and will be put in service soon. Some necessary training and height adjustments are need to insure proper use and acceptable “after cut” appearance before use.? I would personally like to thank everyone on the “greens committee”, “finance committee”, and “the Board” for all the support in making this happen. Great Job Everyone!?I would also like to inform everyone that our current irrigation system software has been upgraded from Toro Sitepro to Toro Lynx. ?I am really excited about this one! What does this mean? Well, it means that we will have more control over the irrigation system and now have the means to manage each individual station on the golf course and provide the ability to “micro manage” the golf holes more appropriately and effectively.? More water in areas that need it and less water where we don’t. Active Time -22 minutes? Total Time-22 minutesIngredients12 ounces short pasta, such as penne or fusilli4 garlic cloves, thinly sliced2 1/2 teaspoons (or more) kosher salt3/4 teaspoon (or more) freshly ground black pepper1 (10-ounce) bag frozen broccoli florets6 ounces green beans, preferably haricots verts, trimmed8 ounces large shrimp, peeled, de-veined, tails left on1 pint cherry tomatoes, sliced in half1 cup frozen green peas3 tablespoons unsalted butter1 teaspoon finely grated lemon zest3/4 cup finely grated Parmesan, plus more for serving1/4 cup coarsely chopped basilRed pepper flakes (for serving; optional)?PreparationPlace pasta in a large, wide-bottomed pot or large, wide, straight-sided pan. Add garlic, salt, black pepper, and 3 1/2 cups hot water. Cover and bring to a boil. Once boiling, uncover and cook, setting a timer for cooking pasta according to package directions and stirring often. When 5 minutes remain on timer, stir in broccoli and green beans. Cover pot and return to a boil. (If pot starts to dry out at any point, add another 1/2 cup water.) When 2 minutes remain on timer, stir in shrimp, tomatoes, peas, and butter. Cover and continue to cook 2 minutes, then uncover and cook, stirring, until pasta is tender, shrimp are cooked through, and water is almost completely evaporated, about 1 minute more.Remove from heat. Stir in lemon zest and 1 cup Parmesan and toss to coat. Season with more salt and pepper, if needed.Divide pasta among plates. While there aremany possible causes, the most common cause I see are players taking the club back tofar inside of the target line which puts them on a flat swing plane leading toa down swing path too much from the inside producing shots out to the rightof target (for right handed players).
