Food Safety and Sanitation Workshop - ServSafe (

Are you industry certified? If not this is the workshop for you. Career Technical Education is moving toward all students earning an industry recognized certification. You must earn your own certification to be able to teach and administer test for your students’ certification. Food Safety and Sanitation: ServSafe( covers the basics of food safety and sanitation and ways to protect against food borne illness. ServSafe( workshops provide the most up-to-date and relevant information and mirrors the sections of the ServSafe(: Manager (Seventh Edition) Textbook. The textbook is required reading prior to attending the workshop. The workshop includes six hours of instruction and review, a two hour accredited examination and one hour for lunch. Food Service and Hospitality instructors will have the opportunity to be certified and/or recertified if they have previously taken the ServSafe( training. Participants who pass the exam will receive a certificate of completion that is valid for five years in California.

NOTE: Due to the fact that the majority of teachers are unable to travel this semester the ServSafe training has been converted to virtual delivery. After the training has been completed the Project Director, Nina Dilbeck will be making an appointment with you to take the ServSafe Manager’s Exam at a location convenient for you.

Registration must be received by the established dates below in order to be processed and the textbook mailed to the participants.

An emphasis will be placed on how to convert your curriculum to distance learning techniques. A look at the trends and issues affecting the Child Care and Education industries today will be discussed. How to develop successful programs in Education and Child Development will be explored. CDE FCS Model Curriculum Standards, course outlines, will be the support for lessons covered.

Workshop Dates: Thursday-Friday, October 15-16, 2020, 3:30-5:30 p.m.

Culinary Arts Skills:

Motivating Curriculum and Internship

Throughout this culinary training Common Core standards and Performance Tasks Assessments will be utilized and highlighted. It is designed especially for Food Service and Hospitality educators to update their culinary and classroom management skills. Sessions will include virtual classroom and lab activities in a professional kitchen to expose participants to the real world of professional baking and cooking. Columbia College professional chef/instructors will conduct sessions designed to increase the skills of the novice as well as the experienced teacher. Distance Learning techniques will be emphasized.

The staff at Columbia College have been converting their courses to Distance Learning for the past 3 semesters. They are eager to pass their experiences (good and bad) so that you can enhance your curriculum and teaching techniques.

You are encouraged to cook along with the chefs during the workshop. You will receive a grocery list and recipes so you cook along with the chefs.

Note: Materials and activities will not be repeated from past workshops.

Workshop Hours: Friday, November 13, 2020, 4:30 – 7:30 p.m.

Saturday and Sunday, November 14 & 15, 2020, 8:00 a.m. – Noon

University Credit: One semester unit of academic graduate credit from CSU, Fresno can be earned for full attendance and completing assignments. Assignments: 1. Prepare the recipes that are presented during the workshop. 2. Provide evidence (video, photo, posted to social media, etc. 3. Explain how you will use the recipe in one of your lessons or explain how it can be modified to be used in one of your lessons.

Credit fee: $75.00.

FCS Core and Concentration

During the summer of 2020 a team of FCS teacher took on the task of updating the Life Management Curriculum Guide: Consumer and Family Studies Comprehensive Core.

The Guide is comprised of 10 Units containing various numbers of Modules and Lesson Plans. Unit 1 of the Guide: Introduction to Family and Consumer Sciences was introduced at the FCS Forum and Collaboration Meeting in September. The remaining 9 units will be introduced at the following 3 workshops. There will be three presenters at each workshop who will discuss 3 of the new lesson plans from one of the units. The lesson plans have been prepared with Distance Learning techniques in mind.

This workshop is designed especially for Food Service and Hospitality educators to update their culinary and classroom management skills. Sessions will include virtual classroom activities and three rotations in a professional kitchen to expose participants to the real world of professional baking and cooking. Los Angeles Trade Tech professional chef/instructors will conduct sessions design to increase the skills of the novice as well as the experience teacher. The chefs have all had industry experiences, which has prepared them to teach you how to prepare your students for employment. Trending foods and industry progress will be highlighted.

That Staff at Los Angeles Trade Technical College are excited to show us their new building, even though it will be a virtual tour. They will also share their journey of teaching hands-on techniques virtually.

Fashion and Interior Design

Looking at the trends and issues affecting the Fashion and Interiors industries today will lay the foundation for this two day workshop. You’ll take a look at labor market statistics and analyze where the needs are strongest, The two-day workshop will feature presentations by professionals from the industries, new technology and media and their impact on what and how we’re teaching, necessary skills and knowledge for entry level positions and much more. Utilize the Performance Tasks Assessments by using the FCS Competency Profiles. Learn about the current industry needs and job market outlook in California’s Fashion and Interior Design industries. All presentation and visits will be virtual
