Welcome! We're so excited to be offering these exclusive Member Packs and Products to our CSA Members. We invite you to view all the details about our CSA Membership on our website.

In a moment, you’ll have the opportunity to select your order for 2018 on the order sheet below. See the last section for help on completing this form (pp. 12-18) or click here to quick-jump there.

Just a few important points upfront…

• CSA Member orders close on Wednesday 28th March. (We won't be offering any more shares until early 2019).

• Once you’ve filled in your selections below, return it to us promptly via email. We have limited Membership Shares available. It's first in best dressed :)

• No payment is required at this point. Only once we’ve received and confirmed your order will we ask you to pay the membership fee ($30) and set up a member subscription for you. The subscription process allows you to pay your 2018 order over eight months (April to November). Again, you can see all the details here: CSA Membership.

YEARLING BEEF

Very few can resist the taste of a great steak or a homemade chunky beef pie. Our organic yearling beef packs mean you'll be spoilt for choice, and you'll be left reminiscing about the flavour of the meat long after the meal is over.

Each box typically includes a range of cuts such as well-known steaks (blade, rump, scotch fillet, porterhouse or eye fillet), diced steak or stir-fry strips, beef roasts and mince. The cuts in our beef boxes will be chosen with the season in mind and may change depending on availability. Each group of meat cuts will be either bagged, cryovaked or trayed, and individually labelled.  

Our certified organic yearlings are up to 18 months of age, are born and bred on farm, and are solely pasture-fed.

LAMB, HOGGET AND MUTTON

If you've got a weakness for a succulent leg roast, or some tender, slow-braised shanks, then you'll love our organic lamb and mutton packs.

Each box typically includes a range of cuts such as a leg or easy carve roast, a rib rack, loin chops or cutlets, forequarter chops, shanks and mince. The cuts in our lamb boxes will be chosen with the season in mind and may change depending on availability. Each group of meat cuts will be either bagged, cryovaked or trayed, and individually labelled.

Our lambs are up to 12 months of age, our hoggets from 13 - 24 months, and our mutton over 24 months. All our sheep are certified organic, born and bred on farm, and are solely pasture-fed.

A NOTE ON OUR LAMB, HOGGET AND MUTTON PACKS *

Please note that we have made three specific changes to our member sheep packs for 2018.

You may wonder why?

It's simply because we've realised we need to streamline and improve our livestock handling and admin practices.

1. For the most part, our lamb packs will consist of lamb, but hogget may be included if necessary (both taste yummy!). Where possible, we'll do our very best to supply customers with lamb. However, as the year progresses (and the lambs grow up), we may occasionally include hogget in your order in place of lamb. We're sure you'll enjoy the slightly deeper flavour of hogget - which is very similar in taste and tenderness to lamb - and is actually the meat of choice for the majority of our customers.

2. We no longer have hogget as a specific option to purchase. Each year, all our lambs and hoggets are born within a few months of each other. This means while some are still classified as lambs, others have lost a baby tooth and become a hogget. There is very little (if any) difference in flavour or weight at this point. We've even had lambs lose their baby teeth and become classified as hoggets in the days between selection and transport! The extra handling of each individual animal to 'mouth' them (literally to count their teeth!) makes for a long day and a sore back! This is why we'll be supplying either lamb or hogget.

3. Our Half and Whole sheep packs will vary in weight throughout the year. Each animal is unique - some have more muscling, and others grow wool faster - and grow at different rates. We've based our member pack prices on average weights for the past few years. Some months you may receive more than the anticipated weight of your pack, and other months, it may be a little less. In order to reduce our admin time, costs for these packs are now charged based on production and processing costs rather than the specific boxed weight of each animal. Where possible, we'll aim to keep all packs close to their expected weights.

COMBO PACKS (BEEF AND LAMB)

Really can't decide if you'd prefer a lamb leg roast or a scotch fillet steak? We know it's a tough decision! If you purposefully choose to eat better meat less often, you'll love the convenience of our organic Combo packs that contain both beef and lamb.

Each box will be unique but will include a range of well-loved cuts including steaks and chops, slow-cooker favourites like diced beef and lamb shanks, and a lamb or beef roast in the larger packs. The mix of your kilos may vary based on availability (we may be low on lamb one month, so we'd include more beef). Each group of meat cuts will be either bagged or cryovaked, and individually labelled.

ORGANIC SAUSAGES

Our range of gluten-free, preservative-free sausages are perhaps our best-selling product.

Finally you can put 'snags' back on the menu and enjoy both their ease and their taste! Containing just a few simple, real ingredients, you'll feel confident that you're providing your family with wholesome food. And even those who are following a restricted eating regime such as Paleo, SCD, GAPS or AIP can gobble them up too!

Depending on the quantity, sausages will either be trayed or bagged.

BEEF SAUSAGES

Gourmet BBQ sausages - $13/kg. Certified organic ingredients: beef, lamb, brown rice flour, seasoned herbal salt. 98% South Australian ingredients.

Hearty Beef sausages - $13/kg. Certified organic ingredients: beef, celtic sea salt, onion powder, sage. Paleo, SCD, GAPS and AIP compliant.

LAMB SAUSAGES **

Honey Mustard Lamb sausages - $13/kg. Certified organic ingredients: lamb, local chemical-free honey, celtic sea salt, wholegrain mustard (mustard seeds, apple cider vinegar, water and sea salt). Paleo, SCD and later stages of GAPS compliant.

Minted Lamb sausages - $13/kg. Certified organic ingredients: lamb, celtic sea salt, garlic, mint, rosemary, lemon zest. Paleo, SC, AIP and certain stages of GAPS compliant.

THE HIDDEN TREASURE (Mince with organ meat)

There's a growing awareness about the enormous health benefits of eating more organ meats. Although previous generations consumed organs with apparent ease, our modern palettes often baulk at the flavour and textures.

Our family were no different, which is why we originally developed this range of 'boosted' mince. Specifically, we wanted to bypass the texture and 'ickiness' factor, and still benefit from the vast array of nutrients contained in organ meats.

Our Hidden Treasures mince range will be cryovaked and labelled.
