IBM FAMILY SCIENCE - PREPARATION DIRECTIONS FOR KITCHEN CHEMISTRYHello,We are looking forward to our Family Science Sessions on Kitchen Chemistry. We encourage the IBM parents to join the session with their child. Our Instructors Vittorio, Ben and George provided these directions for parents and students to prepare PRIOR to this session:ACID-BASE CHEMISTRYThe only required ingredient is the purple cabbage juice. If you are not able to make this, then the rest of the items are not needed - and please join us and enjoy this class! You will learn how to repeat this experiment at home, when you do have the purple cabbage juice. There some alternative suggestions below as well.If you can prepare the purple cabbage juice but are missing some of the other ingredients, that's fine, prepare the purple cabbage juice and as many of the items as you can - you will have fun learning about Kitchen Chemistry!Kitchen Chemistry, Acid and Bases, Preparation ChecklistChecklist?8 cups or glasses, small are better but not necessary, transparent are better but not necessary, paper cups will do since you can look at the result from above1 to 2 cups of purple cabbage juice - see below how to preparewhite vinegar small amount - distilled vinegar, white wine vinegar, rice vinegar, and apple cider vinegar work toolemon juice, small amount - 1 or 2 teaspoonsorange juice, small amount – 1 or 2 teaspoonswhite wine, small amount - 1 or 2 teaspoonsone Tums or similar other antacid tablet, crushed into a powderbaking soda, small amount 1 or 2 teaspoonsdetergent, small amount 1 or 2 teaspoonsa cleaner, like mister clean, small amount 1 or 2 teaspoonsa few teaspoons - actual teaspoons If you are uncomfortable with allowing your child to pour small amounts of liquids into a cup, especially detergents, vinegar and cleaners, you could pour 1/2 to 1 teaspoon of each of the liquids into its own cup or glass, then label the cup or glass with the contents.?Put the purple cabbage juice into a container that your children can handle, they will be asked to pour a couple of tablespoons into each cup or glass.A good idea is to put it in a wide bowl, and have a tablespoon measuring device that the children can use to scoop up the cabbage juice.Preparing the purple cabbage juiceTake a head of purple cabbage, cut in half through the stem, then in half again through the stem.?Take one of the quarters and cut in half along the opposite direction, so now you have 1/8 of the cabbage, which should be more than enough.?First method, fast but messyPut the cabbage into a blender, add 2 cups of water, blend until shredded, then filter the result using a strainer, throw away the debris and keep the juice.Slower but less messyDivide the leaves of the 1/8 of a cabbage and chop coarsely. Put in a pot with 2 cups of water. Cover with a lid, bring to a boil, turn off the heat, allow to cool down, filter the result with a strainer and throw away the debris.??Great, now I have 7/8 of a purple cabbage, what do I do with it? many other ideas on the web.Here are some alternatives to purple cabbageblueberries and blackberries react to acids, but not much to bases. So squash a few blueberries (remove the skin as much as you can) and mix with a bit of water - good news the jams work too: one teaspoon per 5 ml of waterblack tea reacts to acids, white and green will not do much AFAIK. I just tried with English Breakfast, brewed strong, and the effect of lemon is very noticeable.curry or turmeric will react to bases - it might work with the detergents.ExLax tablet (if they contain phenolphtalein) will react to acids quite dramatically. Dissolve one in water. It should turn red or pink when white vinegar is addedpurple grapes should react do acid, I would suggest the same approach as for blueberries. Dark grape juice will work. I do not think the jelly works, though. The white grapes do not work for sure.Vanilla extract and onions: in a strong basic environment you cannot smell them. However you will smell the basis: bleach or ammonia So if you can get one of black tea/blueberries/purple grapes/exlax for the acids, these would go with vinegar, white wine, orange juice and lemon juice.The curry or turmeric will go with detergent, mr clean, tums, and baking soda Having said this, the purple/red cabbage works much better. But realizing that there are many substances in the house that change color in response to acid and bases is also very instructive.EMULSIONSThese experiments will be demonstrated during the session – you don’t need to have anything prepared, just watch and have fun! You can try these experiments yourself at home (with adult supervision of course) using the ingredients listed below.What we’ll be seeing:Making an emulsion – oil in waterMaking an emulsion – cream into butterBreaking an emulsion – milk into cheeseChecklist?1-2 tbsp Vegetable oil, such as canola oil. Don’t use a “hard” oil that has to be reheated – it should be liquid at room temperature.1-2 tbsp Water 3 clear containers (preferably plastic) you can see through easily3 lids for the containers so you can seal and shake them1-2 tsp of Soap – such as dish soapA microwaveable cup, such as a ceramic coffee mug? to 1 cup Heavy Whipping CreamA plastic or softwood ball that can fit inside the container and move freely (optional)? to 1 cup Whole Milk? - ? cup of lemon or lime juice (or vinegar, as a substitute)Spoon for stirring*The amount of all liquids (water, oil, milk, cream) may vary depending on the size of the container you’re using. Scale as needed.Making an emulsion – oil in water:Add one part water and one part oil to a container. Note which liquid is on top and which is on bottomSeal the container and try shaking the oil / water – notice what happens.Let the shaken oil / water sit for a few minutes and observe what changesAdd ~ 1 tsp soap to the oil / water.Seal the container and try shaking the oil / water / soap – notice what pare what happens after you shook the mixture with soap and what happened to the oil / water aloneMaking an emulsion – cream into butter:Add ? - 1 cup heavy whipping cream (preferably kept cold) to a container.(Optional) if you have a small plastic or wooden ball that can fit and roll freely inside the container, add this. This will help to mechanically “agitate” the cream.Seal the container tightly (make sure the lid won’t open – you don’t want things flying everywhere)Shake the container vigorously – notice at first the sound you hear in the container. Try and shake until you barely hear any sound.Open the container – check the consistency of what’s inside. If you shook long and forcefully enough, the cream should had turned into a thick sold – butter! If it is still gloopy or runny, re-seal and keep shaking. The butter should hold firm on a spoon.You can eat the butter – try it on your favorite foods, and think about making your own butter by adding in different ingredients (e.g. chives, honey, garlic).Breaking an emulsion – milk into cheese:In a microwave safe container, add ? - 1 cup whole milkMicrowave the milk long enough to make it hot – you should see a little steam coming offImmediately transfer the hot milk to a container through which you can observe the milkGently stir the milkWhile stirring, add the lemon or lime juiceKeep stirring and observe what happens – you should see blobs or “curds” of milk fat forming and accumulating, leaving behind a murky yellow liquid. You’ve just successfully disturbed the milk emulsion, causing it to separate into an “oil rich” curd and a “water rich” wheyYou can eat both the curd and the whey (if they taste good to you); they are used all over in foods.DURING THE SESSIONS:When the instructor asks questions, you can use Chat – and select to All PanelistsIf you have a question during the session, please use Q&A, again to All Panelists.
