Good jelly is clear, free from crystals or sediment, sparkling, has a tender texture and natural color and flavor of fresh fruit. When removed from the glass, it will hold its shape and when cut leaves a clean, clear, sharp cleavage. Jars should be ½ pint standard canning jelly jar.
