BAKED TACOS

Ingredients:

3 15 – 6 inch round corn tortillas

4 2 lbs ground beef

5 1 – 16oz can refried beans

6 1 – 15oz can of tomato sauce

7 1 pkg taco seasoning

8 2 cups shredded cheese

Directions:

11 Remove one oven rack and place over sink.

12 Preheat oven to 350 degrees.

13 Wrap tortillas in a wet paper towel (that was rung out, so soaked but not dripping) and microwave for 30 seconds.

14 Turn the cold water on over your sink. Working with one tortilla at a time, quickly wave a tortilla under the running water. You are making the tortilla damp but again, not soaked.

15 Drape the tortilla over 2 of the metal rungs on the oven rack you have over your sink.

16 Repeat until all tortillas are draping.

17 Place the entire oven rack back in the oven Bake until tortillas are crispy (approximately 8-10 minutes). Carefully remove tortillas from the oven rack and set aside. Leave oven on.

18 In a large skillet, brown the ground beef. Drain the grease.

19 Add the refried beans, tomato sauce and taco seasoning.

20 Carefully spoon the meat mix into your prepared taco shells. I used a 9x13 pan and was able to get 10 tacos in it and then used a 7x7 foil pan to put the 5 remaining tacos in.

21 Use all of the filling evenly as possible between the 15 tacos.

22 Evenly sprinkle all of the cheese on top of the 15 tacos.

23 Bake for 10-12 minutes until heated all the way through.

24 Add whatever fixings you like on top of your baked tacos.
