Infant Foods: Garden Vegetable Medley

Servings: 6-8

Preparation Time: 20-30 minutes

Ingredients:

□ 1 cup fresh or frozen green beans

□ 1 cup peas

□ 1 cup yellow squash or zucchini (fresh or frozen)

□ 1 cup potatoes, thinly sliced

□ 1 cup fresh carrots, chopped

Directions:

1. Combine all vegetables in a saucepan.

2. Add enough water to just cover the top of the vegetables.

3. Cook until tender, over medium heat, about 20 minutes.

4. Take vegetables out and put into blender, reserving the water.

5. Add a little of the reserved water to the blender to get the desired consistency, blend.

6. If you have leftovers, place in a plastic container and freeze. You can thaw by reheating in a saucepan for later use.

Servings: 6-8

Preparation Time: 20-30 minutes

Ingredients:

□ 2 apples of your choice

□ 1 ripe fresh banana

□ 1 tablespoon crushed Cheerios

Directions:

1. Peel and core apple, slice into chunks

2. Place apple chunks in a saucepan and cover with water

3. Bring to a boil and cook until tender for about 20 minutes

4. Take apple chunks out, puree in a blender, set aside

5. Peel a ripe banana and mash it with a fork in a bowl. If needed, you can microwave to soften for 20 seconds

6. Combine apple puree and mashed banana, mix well

7. Sprinkle crushed Cheerios over mixture and mix, or you can blend again for a smoother texture

8. If you have leftovers, place in a plastic container and freeze. Simply thaw by reheating in a saucepan for later use.

3. Slice egg in half, removing yolk from both halves

4. Mash yolk in bowl with fork, add enough breast milk, formula, or apple sauce to get the desired consistency
