Minutes from the meeting October 6 2007

MINUTES OF THE NORTH AMERICAN TRUFFLING SOCIETY 

The North American Truffling Society meeting of October 9, 2007 was called to order by Charlie LeFevre. Dave Pilz announced that the Yachats Mushroom Festival Association was honoring Marla for her seven years of work with the festival. She has organized the mushroom walks and David had a poster for friends to sign. Dave also announced that he had obtained a mushroom permit from the forest service for picking mushrooms for scientific purposes. Anyone wishing to meet him somewhere on his way to Yachats needs to contact him.

Welles spoke to the group about an idea he had that the Tuber Oregonense be put on the Oregon State list as the state tuber. Jim Trappe made a motion that Welles go forward with the idea and a second by Zelda Carter was made and voting was unanimously in favor of Welles going forward with the idea.

Charlie announced that the Truffle Festival would be held January 25th through 27th, 2008. He has speakers from Europe as well as New Zealand coming. Also premier chefs have agreed to cook at the banquet. Full information can be obtainer from their web site is . 

Jim announced that a former recipient of the Henry Pavelek Scholarship, Dr. Smith would be in Corvallis the first week of January. He would like to be a speaker for the NATS meeting but it would mean we would meet earlier than our regular meeting date. It was discussed and decided that Thursday, January 3rd would work if the Multi Cultural Center was available that date. Matt Trappe agreed to check the availability out.

Matt Trappe reported on the foray October 6th. Hysterangium, Leucogaster, gymnomyces and rhizopogons were found. The November 3rd foray will be to a tree farm in the Black Rock area west of Falls City.

Jim Trappe said NATS needs a new logo and suggested that people come up with a design and at the December potluck a prize would be awarded to the best design. It was suggested that an announcement be added to the November meeting post card and email notice. Continued on page 11

Charlie reported that NATS was torn by strife by a gift from

Jim Bernau this spring but finally after an agreement was reached,

David Pilz was able to work on and produce a white paper

(an authorative report to educate) on truffles in Oregon. The paper

authored by David Pilz, Charlie LeFevre and Leslie Scott is being

reviewed by Jim Bernau and will be available within the month.

When finalized the report will be posted on the Oregon Truffle Festival

website.

At this time David Pilz gave his presentation to the group. Refreshments

were provided by Betty Orner.

A NEW TRUFFLE TERM - ?

 In the August-September issue of the Truffler, Jim Trappe used a word that was

new to me “Fossicking”.  Looking in The Compact Edition of the Oxford English

Dictionary, I found some interesting uses of the word.

 Fossick:  To rummage or hunt about, to search.  We fossicked about for awhile to see

if any thing had been left behind (by other people or animals in truffle digs).  To dig out

or hunt up.

 Steady old fossickers often get more than the first one who opens up the ground.

 The word is an Australian prospector’s term but it sure sounds descriptive of truffling to

me.

Well here’s the second issue. Hope everyone enjoys the finds. And a big shout out to

Pat Rawlinson for getting us caught up on club finds. As well as Zelda Carter for the

minutes of the meeting.

I hope you enjoyed the articles from the last issue, and there will be plenty more for the

next one. I wanted to use this issue to take the opportunity to feature the past finds

that hadn’t yet been printed.

I hope everyone has a fantastic truffle season for the 07-08 fall through spring run.

So far it’s been a wonderful season for chanterelles and lobsters, and matsutakes as

well. I hope you’ve all had a chance to get out and get some.

Michaels, who now has 2,500 hazelnut trees on 20 acres (8 hectares), said he expects his yield to double in each of the next few years. This year's crop was 30 pounds (14 kilograms).

Elusive Crop

It won't be easy. Truffles grow underground and draw nutrients from the roots of trees. Once the truffle spores are introduced, there isn't much for the farmer to do except water, fertilize and wait. After years of this, the roots may produce a small quantity of truffles.

Michaels, whose farm is in Chuckey, Tennessee, picked his first crop by hand with the help of a Labrador retriever that sniffed out the truffles' location. He scrubbed them with a toothbrush under the kitchen tap, placed them in a plastic container with uncooked rice to absorb moisture, and drove them to the closest French restaurant, the Orangery, 86 miles (138 kilometers) away in Knoxville, Tennessee.

``The moment of truth is when they hold it up to their nose,'' he said. ``And they get that slight little smile.''

From Knoxville, word spread: to Blackberry Farm, a culinary resort in Walland, south of Knoxville, and to Atlanta's Restaurant Eugene.

Quick Delivery

``A lot of the quality is odor, bouquet and aroma,'' Michaels said. ``As time goes on, that deteriorates dramatically. I can get it out to restaurants in a few hours, which is really hard to duplicate from Europe.''

The price black truffles command is driven by their short supply, in part because they are so difficult to grow.

for truffle production In neighboring North Carolina, 50 tobacco farmers took up the challenge and planted trees under a $235,000 state grant.

Bob Passarelli, 55, former chef at the North Carolina governor's mansion, planted about an acre of trees eight years ago. He has harvested as much as 4 pounds a year, which he sells to local restaurants. Unusually warm weather has hurt his output.

``Winters haven't been as cold or as long as I need,'' he said.

Growing truffles is about 20 percent science and 80 percent art, Michaels said. His background supplies both: He received his doctoral degree in plant pathology from Oregon State University, and his father was a mushroom farmer in the Chicago area.

After graduate school, Michaels worked for mushroom growers and started his farming business in eastern Tennessee, where the clay is similar to that in France's truffle-growing regions, with the proper acidity and cool temperatures during the winter.

Biggest U.S. Venture

A farmer in Pinehurst, North Carolina, started Black Diamond French Truffles Inc. in June, and will start planting the first 100 acres of a 200-acre farm this year, making it the largest in the U.S., said Charles Warren, who will handle business development.

``It's analogous to California wines,'' said Michaels, who is considering an expansion into northern Alabama or Georgia. ``It takes decades to develop an American-grown product to compete with a European product.''

General Foray Information: Forays are held the first Saturday of each month from October through June, usually within a 60-80 mile radius of Corvallis. We typically meet at 10:00am and are out in the field until to mid-afternoon, so pack a lunch and dress for the weather. Bring a garden rake ("cultivator") with 4-5 widely spaced tines if you have one; if you don't there are usually extras. Many folks bring their own cars so they can leave when they want to, though we certainly encourage carpooling when possible.

General Meeting Information: Meetings are held at 7:30pm on the Tuesday following the first Saturday of the month (the first Saturday of the month is the normal foray date). Meetings are held at the Corvallis Multicutural Literacy Center at 128 SW 9th street in Corvallis (the big yellow house between Monroe and Madison avenues.

Tennessee Truffles Tempt Both Farmers, Chefs at $800 a Pound

Aug. 9 (Bloomberg) -- Seven years ago, Tom Michaels planted a few dozen hazelnut trees in Tennessee's red dirt and waited.

This year, his patience bore fruit. The Tennessee scientist became the first U.S. farmer to harvest black winter truffles similar to France's on a commercial scale. Top U.S. restaurants are paying him about $800 a pound for an aroma and taste they used to buy from abroad.

The potential payoff is persuading dozens of other farmers in the Southeast to cultivate black truffles, a market dominated by France since Napoleon ate them as an aphrodisiac. The truffles, which are part of the mushroom family and grow amid tree roots, are also called Perigord truffles, after the area in France whose climate and river valleys offer ideal conditions.

The reception has been outrageous,'' said Michaels, 60, who researched truffle reproduction for his Ph.D. dissertation. ``It's hard enough to get truffles to grow, but I thought selling them would be the real hurdle.''

Instead, he found ready buyers. One chef who switched from French truffles is Linton Hopkins, owner of Atlanta's Restaurant Eugene, which Esquire magazine named one of the best new restaurants of 2004. He serves truffles several ways: with heavy cream over parpadelle pasta, mixed in risotto, tossed with baby potatoes and in ice cream.

``They were just ideal,'' Hopkins said of Michaels's truffles. ``The aroma was perfect. They really did have an immediacy from the earth, a freshness that you can't mimic.''

Ancient Delicacy

Recipes for cooking truffles with wine sauce date back to cookbooks from ancient Rome, said Ian Hall, who co-wrote the 1994 book ``The Black Truffle'' with Gordon Brown and James Byars. Ancient Greeks and Romans thought truffles were the byproduct of lightning strikes, found treasures like glass on a beach. French farmers scoff at the notion that U.S. truffles could threaten Europe's centuries-old leadership.

``Who here is going to worry about these Tennessee truffles?'' said Gilbert Espenon, a truffle producer and mayor of the town of Saint Didier, in southeastern France. ``They may sell a few in America, but we hardly suffer from overproduction here. Maybe next century will be different, but for the moment we are far from overproduction.''
