INTRODUCTION Food customs vary in different cultures. Culture includes the way people live, how they act, and what they believe. Culture is passed from one generation to the next. It is also shared by people from a certain region or country. In these activities you will examine

Foods of Different Cultures Information Sheet

Culture is the way people live, how they act, and what they believe. Within a culture, there are many factors which can affect a food custom. Food can affect culture and culture can affect food.

Geography plays an important part of food customs. Food varies according to the type of soil, amount of water received, and the climate of a region. If an area is close to the sea, it will have dishes which include fish.

Another part of culture that influences food is religion. Religions give meaning to foods. Certain religions restrict the eating of certain foods. Pork is forbidden in the Islam religion.

A tradition is a custom that is passed on from generation to generation. A tradition can greatly influence food choices. Think of a holiday that is celebrated. Certain foods are eaten during that holiday by your family. Christmas traditions vary from culture to culture. Some traditions are based upon folklore. In China, black tea is called red tea because the color black is considered bad luck. In other cultures, food is considered art. Japan relates their spring festival to food by making flowers, trees, and rivers.

The United States

People have come from many lands to settle in the United States. These different cultures have brought with them their favorite foods. Because of this, the United States is rich with a variety of food customs.

This all began with the first explorers and the Native Americans. Explores came from England, France, Spain. Immigrates came from Germany, Ireland, Italy, Japan, Mexico, and the Slavic countries.

The United States is divided into geographical regions. Each region has unique styles of cooking of food. Because of transportation and communication links, foods from different regions can be found all over the United States.

Northeast and Middle Atlantic States

This part of the United States is close to the Atlantic Ocean. It was settled by the English. The English were influenced by the Native Americans. Some of the dishes they developed were; baked beans, pumpkin pie, cranberry sauce, and clam chowder. The Middle Atlantic States were settled by a diverse group. This area is known for doughnuts, waffles, chicken and dumplings, bagels, lox, hot dogs, and pretzels. This region is also known for their seafood dishes.

South

This area is boarded by the Atlantic Ocean and the Gulf of Mexico. Settlers were from Spain, France, Africa, and the British Isles. Soul food was founded in the South. It is based on the food customs of the African slaves, Native Americans, and poor Europeans. Soul food is known to be hot and spicy. Some examples for soul food are; fried catfish, fried chitterlings, and hush puppies. Stews are made from squash, black-eyed peas, okra, and greens. Creole food has its beginnings from the French, Spanish, African, and Native American Cultures. Rice, tomatoes, okra, seafood, poultry, hot sausage, and other meat are used in Creole food. These dishes are very hot and spicy. Two popular Creole dishes are jambalaya and gumbo.

West and Southwest

This land is in the west and southwest of the United States. The foods take their inspiration from the Mexicans Spaniards, and Native Americans. In the west, hot peppers are a staple. Dishes are barbecued beef, chili, tamales, and nachos. The western food was influenced by the Spanish and Native Americans. Thick stews, barbecued beef and lamb are popular in this region.

Midwest

The Midwest is known as our nation’s breadbasket. Ethnic groups were Scandinavian, Swiss, German, French, Polish, Irish, and Greek. Foods from this area include; cheeses, lasagna, pot roast, and apple pie. Potluck dinners are very popular. Potluck dinners have several families eating together. Each family brings several dishes to the dinner.

West Coast

The West Coast is on the Pacific Ocean. Settlers from Mexico and Asia influenced the food. The food here focuses on seafood and fresh products. Their dishes combine seafood with avocados, artichokes, alfalfa sprouts, and walnuts. Chinese and Mexican foods are very popular here. This region is known for its sourdough bread. This bread is made from a special starter that gives the bread a fermented, sour flavor.

Alaska

This region is surrounded by water on three sides. People native to Alaska contributed caribou sausage, reindeer steak, king crab, salmon, and trout. Cranberry catsup and huckleberry pie are favorites.

Hawaii

Hawaii is located in the Pacific Ocean. It includes several islands. Settlers were Polynesians, Americans, and Europeans. Tropical fruits are very popular. Mangoes, coconuts, papayas, and pineapples grow here. In this region, stir-fry cooking is very popular. Stir-frying is cooking small pieces of food over very high heat with very little oil. Other food which are popular was roast pig, mahi-mahi, (a Hawaiian fish), seafood, coconut bread, and poi. Poi is served with many Hawaiian foods. It is a paste made from the taro plant.

4. Hand in to your instructor the Time Work Plan so supplies are purchased for you.

5. Locate Food of Other Countries worksheet. Write the answers on your own paper.

1. Get out your recipe and Time Work Plan. READ over these carefully!

2. Go to kitchen and assemble all the supplies needed to prepare this recipe.

3. Once again, read over the instructions, and then begin cooking.

4. Once you get to the baking or simmering of the recipe, start cleaning up your kitchen.

5. Locate the posttest and complete it according to the directions.

6. Get out a piece of notebook paper and place your name, class and folder # in the upper right hand corner. Place your module name on the top line. Copy the following list, and then gather the assignments in order. Place the list on top and staple the stack together. Paperclip your pre/post test answer sheet on top.
