Add onion and garlic. Cook until they begin to brown. Stir often. (~5 min)Add carrot, cumin and pepper. Cook 1 minute, then add squash, apples and chicken brothBring to a boil. Reduce heat, and simmer for 15-20 minutes (or until vegetables are tender)Remove from heat, puree the soup until smoothMushroom Sliders (Makes 8 patties)1/3 cup Mayonnaise2 Tbsp Ketchup1 tsp Cayenne Pepper (less if sensitive)4 dashes Worcestershire Sauce3-4 Tbsp Olive Oil? cup finely diced onion? cup shredded carrots3 ? cups finely chopped mushrooms? - 1 tsp SaltPepper to taste4 dashes Worcestershire Sauce1 lb Ground Beef8 Dinner RollsCombine mayo, ketchup, cayenne pepper, and Worcestershire SauceSweat (sauté) the onions and carrots, and mushrooms in the oil. Add pepper, salt and a couple dashes of Worcestershire Sauce Allow the cooked vegetables to coolCombine sauce, cooked vegetables, and raw beef. Form into patties.Bake or grill the patties until they reach 165 degreesServe on roll. Add toppings per preference (tomato, lettuce, onions…)…TRY this recipe with other recipes that require ground beef such as burritos, tacos. You may need to adjust the seasonings.
