What you'll need:

For the Macaroni: ? 24 Cup mini muffin pan ? 6 oz. Elbow macaroni ? 3 oz. Cream cheese ? 1 ? Cups of shredded sharp cheddar cheese ? 1 Tbsp. Unsalted butter ? 1 Large egg ? ? Cup milk ? 1/8 Cup sour cream ? 1 tsp. Garlic powder ? Pinch of salt and pepper

For the Crust: ? 1 Cup crushed Ritz crackers ? 3 Tbsp. melted butter ? ? Cup sharp cheddar cheese shredded

How It's Done:

1. Preheat the oven to 375 degrees.

2. Spray the muffin tin with cooking spray.

3. In a large bowl, melt the butter. Mix in crushed Ritz crackers, along with the ? cup cheddar cheese.

4. Place a spoonful of the mixture into the bottom of the muffin pan; pressing down firmly making sure it is packed tightly. The crust should cover the bottom and part of the sides of the muffin tin.

5. Begin cooking the macaroni noodles until they are almost done (al dente). Strain the noodles and put into a large bowl. Add the milk, eggs, cream cheese, cheddar, sour cream, unsalted butter, garlic powder, salt and pepper. Mix thoroughly until the cheese is melted and free of clumps.

6. Spoon the mac and cheese mixture into each tin and bake for 15 minutes.

7. Remove from the oven and let sit for 15 minutes. Serve warm and enjoy! (Pro tip: Use a butter knife to easily remove the bites from the tin)
