CONCESSION STAND MANUAL FOOD PREPARATION MAKING POPCORN 1. Turn the Kettle Heat and Kettle Stir Motor “ON”2. Load popcorn, oil and salt into kettle. Close the lid. 3. Listen for popping to slow down. 4. Dump kettle. 5. Continue popping or turn off kettle and motor.6. Keep warming light on.7. Bag popcorn. POPCORN MIXTURE? cup liquid butter or oil1 cup popcorn1 tsp. popcorn saltCOFFEE MAKER 1. Slide out coffee grounds holder. 2. Place one prepackaged bag of coffee grounds into holder3. Return holder to coffee maker. 4. Place empty coffeepot on burner under filter. If making decaffeinated coffee, use a pot with an orange handle. For regular coffee use pots with black handles. 5. Push “start” button. 6. Turn other warming burners on as needed when pot of coffee is made. 8. DO NOTLEAVE AN EMPTY COFFEEPOT ON A BURNER THAT IS TURNED “ON” OR PLACE AN EMPTY HOT COFFEEPOT IN COLD WATER. THE POT WILL BREAK. SERVING CAPPUCCINO AND HOT CHOCOLATE1. Take desired size Styrofoam cup and place under desired drink spout. 2. Press button and hold 3. Machine will automatically dispense cappuccino/hot chocolate, let go of the button when cup reaches ? full. The desired liquid will continue dispensing for a few seconds. SODATake desired size cup from counter, left of the soda dispenser.Fill ? full of ice, place scoop back into cup on counter. DO NOT LEAVE THE SCOOP IN THE ICEFill with soda, place cover on, and put straw in cover.SLUSH PUPPYTake plastic cup from side of slush puppy machineFill with desired flavor of slush puppyServe with a cover and strawSLUSH PUPPY MIXTURE(mix will be found under the pizza warming machine)Use an empty pre-marked jug, pour desired flavor of concentrated slushy mix to the bottom line, (approximently 1 inch from the bottom) fill the remaining container with water to the black line at the top. Shake and pour into Slush Puppy machine (the black covers at the top of the machine lift off to fill; fill with desired flavor needed)APPLE CIDERTake desired Styrofoam cup size.Fill with HOT water, from the dispenser on the coffee maker.Add 1 packet of cider mix for small, 2 packets for large.Stir, and serve with a cover HOT TEATake desired Styrofoam cup size.Fill with HOT water, from the dispenser on the coffee makerAdd 1 tea bag for small, 2 bags for large, (these are found on the shelf above the hot chocolate machine)Stir, and serve with a cover COFFEETake desired Styrofoam cup size.Add coffee, regular or decaf.Give customer a lid or place lid on coffee before giving to them.Cream and sugar should be on counter for customer to add.NACHOS 1. Put on glove or use tongs to place nacho chips into plastic tray. 2. Dispense cheese into small cheese compartment. HOT PRETZELS 1. Take pretzel from freezer. (Bottom drawer of the upright freezer that is closest to the outside door)2. For salted pretzel run topside of pretzel under water and then dip or sprinkle pretzel with salt.3. For unsalted do nothing. 4. Place pretzel in pizza oven.5. Turn dial to 3 minutes. Check when timer goes off, if not done, place back in oven and set timer again. When cooked place pretzel in the pretzel warmer with a tongs. 6. When making pretzels for the first time of the day, make some salted and some unsalted. 7. When serving pretzels, place cheese in small plastic cup and place pretzel on 1 piece of aluminum foil. SOUP 1. Remove leftover soup or new bag of soup from refrigerator. 2. Place kettle into Crock-Pot, with water filled to line indicated. 3. If you need to heat an individual bowl, place soup in Pyrex measuring cup and microwave on high for approximately 120 seconds. 4. Heat soup on back counter and maintain on low setting and maintain at 160°. 5. Serve in a soup bowl with a spoon and two packages of crackers. HOT DOGS 1. When only 1 or 2 youth games in a day and at Open Skate- heat hot dogs only upon request in the microwave.2. Serve on a bun in paper sleeve.3. Mustard and ketchup will be on the counter for the customer to add. TACO FRITOPlace seasoned meat in the Crock-Pot on the back counter and set on HIGH to reach desired temperature, stir regularly to keep from burning the meat. Once desired temperature has been achieved turn crock-pot to 5 (medium heat). If you run out of Taco Frito Meat, you will need to take a bag of frozen meat out of the freezer. (Please make sure that there is not a fresh kettle of meat in the refrigerator, before you take one out). 1. Place Fritos in a paper boat wearing a plastic glove, (about 1 handful). 2. Add 1 scoop taco meat. 3. Add warm cheese to top of meat. 4. Serve with a fork. PIZZA1. Make only 1 pizza at a time.2. Cutting instructions are on the rack next above the pizza ovens. (cut into ?’s) 4 slices per pizza CLOSEUP AND CLEANING INSTRUCTIONS WASHING DISHES 1. Wash all dirty dishes in the sink to be sure all meat and cheese products are off dish before placing in the dishwasher.2. Place dishes in plastic trays. Slide tray into dishwasher, pull down handle, dishwasher will automatically wash dishes, when washing stops, lift handle slide tray through to other side, dishes should drip dry before putting away. POP MACHINE 1. Remove grate from pop machine and wash. 2. Rinse down the drip pan on pop machine with hot water. 3. Replace grates. 4. Wipe down backside of dispenser (silver area, where pop splatters).CAPPUCCINO/HOT CHOCOLATE MACHINE 1. Remove spill tray, wash with hot water.2. Fill cappuccinos if needed and hot chocolate. Powder should be in a drawer or on a shelf. 3. Wipe down counter under machine and the outside of machine. SLUSH PUPPY MACHINE 1. Remove grate from under dispenser rinse with HOT water. 2. Wipe down machine, countertop, under and around machine.TURN OFF THE FOLLOWING APPLIANCE AT CLOSING 1. Coffee Maker 2. Popcorn Maker 3. Pretzel Warmer4. Pizza Warmer5. Unplug ALL crock-pot’s, remove kettle’s and place leftover food in plastic containers, empty water from crock-pot’s, wipe them down, and the counter it was on. 6. Remove all candy on the countertop and close window, pull down from the middle and put the pin into the hole on the left-hand side. POPCORN MACHINE 1. Wipe out the inside of kettle with clean towel. 2. Clean doors and windows with hot wash cloth. 3. Throw out unpopped kernels. 4. Turn off all switches. MICROWAVE 1. Wash inside thoroughly (including top) to remove all splatters. COUNTER TOPS AND FLOOR 1. Clean counter tops with hot soapy water.2. Sweep Floor. GARBAGE 1. Break down any cardboard and take out to the dumpster located outside the south door (don’t get locked out). 2. Place new trash bags in the garbage can if needed in the concession stand. 3. Check the back door of the concession stand to be certain it is locked. THINGS TO DO WHEN IT’S SLOWRestock cups, lids, and straws for the soda.These items can be found either in the cupboard under the soda dispenser or in the back of the kitchen on the metal shelving.Restock cups, lids, and straws for the coffee, hot chocolate, and cappuccino. These items can be found in the cupboard under the hot chocolate dispenser, or on the bottom shelf of the metal stand which the coffee makers are on. Restock the cups, lids, and straws for the slush puppy machine.These items can be found, in the cupboard under the slush puppy machine or on the metal stand, which the pizza warmer is on.Restock candy.Candy can be found in the cupboard under the slush puppy machine or on the shelving under the sales window.Fill hot chocolate and cappuccino powders.The machine opens from right to left, powders are in the drawn under the machine, cut the top off the bag and pour into the corresponding plastic container.Wipe down counters!!!!!! Check cheese in the cheese dispenser. There should be at all times, 1 cheese dispensing, and 1 more unopened bag of cheese on top of the opened bag. This warms the unopened bag, so it’s ready when the first bag is empty. The cheese can be found on the shelves on the east wall. ................
