This is a great recipe for any party and can be made in advance. Leftovers are just as good.

Salad Dressing: Should make up hours prior to serving

? Cup Weston oil (do not use olive oil) 2T. Sugar 2T. Champaign vinegar ? t. Salt Dash or two of Tabasco sauce

MUST USE CHAMPAIGN VINEGAR ? as that makes all the difference in the taste. Recommend doubling this recipe if there are more than 6 people and always add extra almonds, oranges, bacon and onions when doubling the recipe.

Package of Romaine lettuce cut up and chilled prior to serving

Add ?+ Cup of bacon bits (cut up in small pieces and fried ? fresh; can use canned bits also) ? Cup of silvered almonds 1 Can (small) mandarin oranges 2 Green onions (chopped; greens only)

Mix these ingredients with the lettuce and then add the salad dressing. Toss well and let stand 10 minutes before serving so that the dressing mixes well with the other ingredients.

Chicken Broccoli/Curry/Cheese Casserole: 2 Medium whole chickens 1 Can of evaporated milk 1 Can of Cream of Chicken Soup 1 Cup Mayo 2 teaspoons curry (do not exceed ? especially if folks don't like curry) 2 Large clumps of broccoli (steamed and cut up in small pieces removing the stems) 1.5+ Cups of Cheddar cheese shredded

Wash and par boil whole chicken for 15-20 minutes on a hard boil so chicken is not pink. Drain water and pat meat dry, skinning from bone and chopping up meat into smaller pieces (no chunks)...be careful to remove all bones so there is only meat left ? set aside.

Par boil broccoli but don't overcook...drain and cut up broccoli into smaller pieces ? set aside.

Bring to boil milk, soup, mayo, curry...when hot enough melt 1 cup of cheese into mixture so cheese melts; bring to a boil. Mix chicken and broccoli together and put into a larger bowl. Pour hot sauce mixture over meat and broccoli so the sauce is well distributed and chicken and broccoli are covered evenly with the sauce. Pour into baking dish (larger than 9x12").

Lightly salt and pepper then sprinkle cheddar cheese to cover top of mixture. Bake 350 degrees for 45 minutes to 1 hour...check to make sure that dinner does not overcook and burn cheese on top. The casserole is ready to serve when the sauce cooks up and the casserole is firm.

You can make this dish up in advance and keep in the frig...great to bake following day or bake and reheat later. This dinner is excellent with the Mandarin Orange Salad.
