“The barrel program is 40% old, 60% new, un-inoculated.” Translated into laymen’s terms, this means the wine was fermented in oak barrels, some old, some new. New oak imparts a more powerful presence on the wine’s flavors, while old oak has little impact. “Un-inoculated” refers to the wild, naturally occurring yeasts used. ................
