• A large peach has fewer than 70 calories and contains 3 grams of fiber. It is also a good source of vitamins A and C.

• The flowers from both summer and winter squash are edible and delicious.  They come in different shades of yellow and orange and have a taste that hints of the squash itself.

• You can grill okra by simply brushing the whole pods with olive oil and placing them cross-wise over the grill grids.  Cover the grill and cook over medium-high heat for 3 minutes, then turn and cook the other side for 2-3 minutes more.

It’s hard to believe that the 2014 Farm Fresh Ventures season is winding down. We just have one more week to go. We hope you have been enjoying all the fruits and vegetables you have received in your weekly boxes and that you will sign up again for the 2015 season. If you still have empty boxes that you have not returned, be sure to bring them with you when you pick up your last box of produce next week. Freezing Peaches

Most fruits can be frozen satisfactorily in some form. The flavor is generally retained but the texture may be somewhat softer than it is for fresh fruit. Packing fruit in a syrup solution or with sugar will help maintain the best texture. As with any frozen product, quality is determined by freshness of the original product, type of pack and any special treatment given prior to freezing.

To prepare peaches for freezing, sort, wash and peel. Cut into slices. One method is to pack the peaches in a 40% syrup, made by dissolving 2-3/4 cups of sugar in 4 cups of water. Be sure the syrup is chilled before packing the fruit. Start with ½ cup of syrup to a pint container. Press the peaches down into the syrup, adding more syrup to cover. Leave ½ to 1-inch headspace. Place a small piece of crumbled water-resistant paper on top to hold the fruit under the syrup. Seal and freeze. For a better quality product, add ½ teaspoon (1500 mg) ascorbic acid per quart of syrup.

Peaches may also be packed in sugar. To each cup of prepared fruit, add 2/3 cup sugar and mix well. Stir gently until the sugar is dissolved or let stand for 15 minutes. To retard darkening, sprinkle ascorbic acid dissolved in water over the peaches before adding the sugar. Use ¼ teaspoon or 750 mg ascorbic acid in 3 tablespoons cold water to each quart of fruit. Pack peaches into containers, leaving ½ inch headspace. Seal and freeze.

To water-pack peaches, pack slices into freezer containers. Cover with cold water containing 1 teaspoon of ascorbic acid per quart of water. Leave ½ to 1-inch headspace. Seal and freeze.

Fresh Peach Cake

Ingredients

¼ pound (1 stick) unsalted butter, at room temperature

1 ½ cups sugar, divided

2 extra-large eggs, at room temperature

1 cup sour cream, at room temperature

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

½ teaspoon salt

1 teaspoon ground cinnamon

3 large, ripe peaches, peeled, pitted and sliced

½ cup chopped pecans

Directions

Preheat oven to 350 degrees F. Grease a 9-inch square baking pan.

In the bowl of an electric mixer, beat the butter and 1 cup of the sugar for 3 to 5 minutes on medium-high speed, until light and fluffy. With the mixer on low, add the eggs, one at a time, then the sour cream and vanilla, and mix until the batter is smooth. In a separate bowl, soft together the flour, baking soda, baking powder, and salt. With the mixer on low, slowly add the dry ingredients to the batter and mix until combined. In a small bowl, combine the remaining ½ cup sugar and the cinnamon.

Spread half of the batter evenly in the pan. Top with half of the peaches, then sprinkle with two-thirds of the sugar mixture. Spread the remaining batter on top, arrange the remaining peaches on top, and sprinkle with the remaining sugar mixture and the pecans.

Bake for 45 to 55 minutes, until a toothpick inserted in the center comes out clean. Serve warm or at room temperature.
