Javier Alarco’s culinary career began even before attending George Brown Culinary School in Toronto from 1984-1988. There, he graduated top five in his class and received a Bachelors in Culinary/Hotel Management. Upon graduation, Javier stage`d at the world’s renowned (Mandarin Hotel) La Parot restaurant in Hong Kong.

One of Javier’s greatest passions is creating dishes that bring the utmost pleasure to those who taste them. This passion, coupled with his ambition and drive has led to an impressive and flourishing career as a chef at the Hyatt, one of the world’s leading luxury hotels.

Javier has cooked for Royalty, Political Figures and Movie Stars.

His career as a chef has allowed him to explore many of the world’s exotic cultures and cuisines, which have inspired his culinary creations. Over the years he has cooked in the kitchens of the four corners of the globe, including countries such as Israel, China, Europe, United States, Canada, and through out the Caribbean.

No stranger to the Hyatt hotel family, Javier relocated to Vancouver in 2004 from San Francisco, where he held the position of executive sous chef at the Grand Hyatt San Francisco from 2002 to 2004. Prior to his position in San Francisco, Javier was executive sous chef at the Hyatt Regency Aruba Resort and Casino in the Dutch Caribbean, as Chef de Cuisine Javier was a driving force during the grand opening of the Park Hyatt Toronto in 1999.

In his current role at the Hyatt Regency Vancouver, Javier is responsible for all of the hotel’s food and beverage services, including all restaurants, room service and catering for the 45,000 square foot banquet facility. He also supervises the hotel’s 40 plus cooks and chefs.

His extensive experience in the kitchen has earned Javier the role of coach and instructor at international culinary competitions. In 2000, he coached Hyatt’s Aruba Culinary team to one gold, three silver and one bronze medal, and placing third overall in the Caribbean standings.

Born in Lima, Peru, Javier grew up in Toronto and is proud to call Canada home. In addition to the English language, Javier is also fluent in Spanish, French, and Hebrew and has a working knowledge of German. He currently lives in Vancouver with his wife Rita. When Javier’s not in the kitchen he enjoys a good game of Lacrosse or Golf.
