You may have heard about the two certainties of life? Death and Taxes. Well, if you live in Alberta, there is a third. Winter! And…it is definitely here. So, if you follow my philosophy in winter, always look for the pleasures and activities that bring you joy in winter (even though most of them are covered by snow). With that, we, on the executive, joyfully invite you to our November Christmas Potluck Social to be held on Thursday, November 29, 2018, at 6:00 p.m. at the Log Cabin (50 Spruce Avenue, Sherwood Park). Please bring a dish of your choice to share with the other guests. The executive will bring appetizers and the turkey. To the new members, your husbands or wives are invited to attend, as well. 4320540156781500A little about our October AGM and speaker. I thank you all for attending. JC, our secretary, counted 70 in attendance, which is a record number for an AGM. I know that many of you attended to hear our wonderful speaker, Joe Gadbois, and to sample all of the delicious food brought for the Taste of the Season, but I hope that you also attended to elect some of our executive and to find out more about how our club operates. I thank Pat and Bud and Susan and Marlene and Dorothy for allowing their names to stand for another two years on the executive. We could not operate without their support and commitment to the club. So, to the rest of the membership, please consider offering your skills and enthusiasm to our executive by volunteering to take on one of the executive positions that will become open in January of 2019. We need someone to fill the position of vice president. My term as president ends at the end of 2019, but then I intend to allow my name to stand for another two years, and if I am re-elected that leaves three years for a vice president to gradually work into the next position. We need someone to fill the position of Snack Coordinator. It is a much-appreciated position. I know I very much look forward to the goodies volunteers bring to each meeting and would be disappointed to not continue this part of the meetings. At our executive meeting in October, after much discussion, we decided that this is exactly what we would need to do if no one volunteered to help out. Discontinue this part of the meeting. So, if you have a suggestion or an idea, please feel free to contact me. My phone number is on the last page. Or give me an early Christmas present and approach me at the potluck with an offer to take on one of these two positions. That is exactly what Cindy and Mary did last year and the year before. Also, we need someone to assist Brenda in arranging for our speakers. It is simply the foundation of our meetings, and Brenda, after many, many years in this position, is requesting that someone else, if not take it on, at least volunteer to assist. As a result of the new executive position created at the AGM, we have appointed Alicia Mitchell as the Social Media Coordinator for the next year. Alicia will be responsible for both administering our Facebook page and maintaining our Website. She will also be offering a Facebook sign in workshop in the new year for all of you who have thought about signing in to Facebook but have absolutely no idea how to do so. (I confess I am one of you.) This workshop will be announced in January. At our last executive meeting, we decided, after discussion, to restrict our Facebook membership to members of the Strathcona County Garden Club. So if you know of a friend or family member who would like to join our Facebook page, please encourage them to join our club. Finally, I would like to welcome two new members to our club. We welcome Lesley Furnell and Deb Kennedy who had the courage to join at our Annual General Meeting. A special invitation to you, Lesley and Deb, to join us for our November Christmas Potluck. In fact, I would love to see all of the club members attend. Salsa Ingredients-submitted by Shirley Radmanovich1 red onion, chopped1 white onion, chopped1 yellow onion, chopped6 lbs fresh tomatoes, peeled and chopped2 banana peppers, chopped3 green bell peppers, chopped3 (6 oz) cans tomato paste? cup white vinegar2 tbs garlic powder1 ? tbs salt1 tbs cayenne pepper1 ? tsp ground cumin? cup brown sugarCombine all ingredients in a large pot. Simmer until thick, about 3 hours.Sterilize 8 pint canning jars, lids and rings in boiling water for at least 5 minutes. Fill jars with salsa to about ? inch from the top. Run a spatula around inside of jars to remove air bubbles. Wipe the rims of the jars with a moist paper towel to remove all food residue. Place lids on jars and screw on the rings.Place a rack in a large stockpot or canner and fill halfway with water. Bring to boiling. Carefully lower jars into boiling water, leaving space between the jars, and covering them by at least 1 inch of water. Bring again to boil and process, covered, for 10 – 15 minutes.Remove jars from water bath and place on a towel to cool. Once cool, press the top of each lid to ensure the jar is sealed tightly. The lid should not move up or down. Refrigerate after opening.Lemon Zucchini Bread1 2/3 cups (238 g) all-purpose flourLemon Glaze2 tsp baking powder? tsp salt2/3 cup (65 g) powdered sugar? cup (160 g) granulated sugar1 ? tbs fresh lemon juice2 tbs lemon zest (from about 3 lemons)? cup canola or vegetable oil2 large eggs at room temperature? cup (62 g) plain Greek yogurt1 ? tbs fresh lemon juice1 cup (150 g) finely grated zucchiniPreheat oven to 350 F. Butter an 8 by 4 inch loaf pan. Then lightly dust with flour and shake out bine flour, baking powder and salt; set aside.In the bowl of an electric mixer, combine sugar and lemon zest for 30 seconds. Add in oil and eggs until combined. Pour in half of the flour mixture, blending just until combined. Add in the yogurt and lemon juice; blend to combine. Add remaining flour mixture, blending until nearly combine. Remove bowl from mixer and fold in zucchini using a spatula.Pour batter into loaf pan and bake until a toothpick comes out clean, about 45 – 48 min. Let cool in pan for a few minutes, then remove from pan, inverting loaf on a cooling rack.When loaf is nearly cool, prepare the glaze and drizzle over the loaf. Store in an airtight container.
