BBQ Ribs ~ These 8 inch ribs are meaty and ready to thaw and prepare for the barbecue.  It is helpful to order by the number of ribs you want.  Each package ranges in weight from 1.5 to 5 pounds.

Brisket ~ These are available in whole or half sizes.  The whole weighs around 4 to 5 pounds.  They can be barbecued or cooked in the crock pot or roasted.  If roasted, it is wise to put the temperature very low (250) cover it and cook over several hours.

Chuck Roast ~ These come with or without bone. Chucks are great for moist cooking.  A packaged roast weighs from 2.5 to 4 pounds. 

Cross Cut Shanks ~ There are generally two to a package.  These pieces are circles of 1 inch thick cuts with the marrow bone in the center.  They are easy to handle and wonderful for soups or stew meat.  The package weight is 1 to 1.8 pounds

Dog Bones ~ We put about 3 bones in a zip lock bag.  The bones are usually about 8 inches long and are generally from the hip and leg area.  These are the size a medium to large dog would enjoy. We charge per package not by weight.

Eye of the Round Roast ~ The eye of the round roast comes from the most tender part of the round.  They weigh from 2 to 3.5 lbs. each.

Flank Steak ~ These are very thin cuts that are terrific marinated and grilled quickly.  There are only two per steer so they go quickly.  They weigh from 0.8 to 1 pound per package.

Ground Beef ~ The ground beef is approximately 85% meat to 15% fat.  They are packaged in tubes or chubs and vary in weight from 0.90 to 1.3 pounds per chub.

Heart ~ One heart comes in a package.  It is opened up and ready to stuff, tie and cook.  Or, it can be chunked and cooked how you wish. It makes delicious kabobs and stews.  It is an important source of the amino acid 1.  The weight is from1.5 to 2 pounds each.

Beef Liver ~ This comes in a paper tray in approximately 1 pound weights.  It is one of nature’s most nutrient rich foods and is an important source of vitamins A and B (especially B12), folic acid, copper.  It can be marinated in lemon juice, cut in small pieces, quickly sautéed and fed as finger food.

Kidney ~ These come one to a package and weigh just less than 1 pound each.  Kidneys are rich in protein, niacin, B6, folate, phosphorus, zinc and copper and a very good source of riboflavin, vitamin B12, iron and selenium.  

New York Strip Steak ~ This is a boneless steak from the top loin section of the Porterhouse.  There are two to a package, are 1 inch thick and each package weighs around 1.25 pounds.

Oxtail ~ These weigh from 1.5 to 2.5 pounds, are scored and folded in the package.  They are wonderful for soups and broths. There is one tail per package.

Porterhouse Steak ~ This is the largest of the steak cuts; They are 1 inch thick and have a bone in them.  There are two steaks per package.  Each package weighs 2 to 2.5 pounds.  

Rib Roast ~ These are 3 or 4 rib roasts.    Larger rib roasts can be ordered upon request by the number of ribs you prefer.  These are wonderful for special occasions.  They weigh from 2.5 to 3.5 pounds each.

Round Steak ~ There is one steak per package.  These are large ½ inch cuts from the round.  They can be chunked into cubes for stews or simmered in a sauce and shredded.  Spread vegetables and spices of your choice then roll and tie and simmer in broth or spaghetti sauce. Each package weighs around 1.5 pounds.

Round Roast ~ These roasts come from either the top or bottom of the round.  They are boneless and tied.  They cook in a crock pot with vegetables or as a pot roast with potatoes, carrots and onions. They weigh between 2.5 and 3.25 pounds each.

Skirt Steak ~ This is a long, flat, thin, boneless steak cut from the diaphragm area.  They are great marinated and grilled quickly; very tasty. There is one to a package and the weight is around 1.0 to 2 pounds. 

Sirloin Tip Roast ~ This roast is cut from the sirloin section and is tender enough to be oven roasted and used for slicing or kabobs.  They weigh around 3 pounds per package.

Stew Meat ~ These hearty chunks of meat come from upper end cuts and are not scrap pieces.  The packages are around 1 pound in weight.

Soup Bones ~ Our soup bones are neck bones which have nice amounts of meat on them.  They are sold by the pound and vary in weight from 1 to 2 pounds per package.

Short Ribs ~ These are BBQ ribs cut in 2 to 3 inches.  They are terrific for finger foods for children or for party snacks.  They are meaty and cook just as you would BBQ ribs.  It helps to order by the number of pieces you would like.  The packages vary in weight from 1 to 3 pounds.  

Tallow ~ The hard fat that can be melted or rendered for cooking.  It comes from the back and is sometimes called back fat.  The butcher returns it to us in thin pieces that are 6 to 8 inches long and gathered in a large bag that we break down according to the requested weight.  It is best to render it after cutting or breaking each piece into smaller pieces and then straining the solids out for later use.

T-Bone Steak ~ This steak contains part of the top loin and part of the tenderloin which are separated by a “T” shaped bone.  The T-Bone contains less of the tenderloin than the 

Porterhouse Steak does.  They are great grilled, broiled or pan fried.  Each steak is 1 inch thick. There are 2 to the package and the average weight is 1.5 to 2 pounds.  

Tenderloin ~ This cut is the tenderest of all the beef cuts.  They come from the inside of the short loin.  We receive them from the butcher butter flied with two pieces per package. The packages weigh from .8 to 1 pound each.  

Tongue ~ Stewed then peeled, this variety cut is a good source of vitamin B12 and iron.  There is one to a package; weights are from 1.4 to 2 pounds each.

Top Sirloin ~ This boneless steak is cut from the top butt muscle just before the sirloin and just ahead of the round.  They are especially delicious when marinated and cross-cut in thin slices.  They are popular for those who like to make jerky.  They can be grilled or broiled.  There are two in a package and they weigh from 0.8 to 1.25 pounds per package.

Tri Tip ~ This is a triangularly shaped roast that is excellent when marinated and grilled.  It can be browned and roasted in a covered roasting pan as well. Weight varies from 1 to 2 pounds.  There is one in a package.

Suet ~ This is the hard fat from the kidney area.  The butcher returns it to us in a bag or box which we put in zip lock bags according to the requested weight.  It is rendered like tallow.  Its flavor is stronger than tallow and preferred by those familiar with it.
