Easy and Delicious Carrot Cake Recipe Carrot Cake is not only a popular desert/snack but is healthy because it is made of carrots. It is so easy that kids love to help make it and enjoy eating as well!(Kids can help in peeling carrots, cracking eggs, mixing ingredients and pressing the button on the mixer…What fun!)Carrot Cake with Chocolate Icing (optional)Ingredients:4 carrots1 cup vegetable oil4 eggs2 cups flour (sift flour)1 ? cup sugar1 Tablespoon baking powder (sift baking powder)? cup chopped pecans (optional)Directions:Preheat oven to 350 degrees. Grease cake pans (round/oval)Cut the carrots into small pieces and blend in food processor together with one cup of vegetable oil and four eggs. Pour this mixture into a bowl; add two cups of flour, 1 ? cup of sugar, and one tablespoon baking powder. Add pecans (optional). Mix together and pour into baking pan. Bake for about 40 minutes. If icing the cake, following are the ingredients:6 Tablespoon sugar2 Tablespoon chocolate powder1 Tablespoon butter2 Tablespoon milkCombine all ingredients in small saucepan. Cook over medium heat, stirring until it thickens. Let cake cool then spread the icing on the cake.
