250 ml cider vinegar. 1.5-2 tablespoon salt. 2 tablespoon ground cumin seeds. 1-2 tablespoon chilli powder if you want extra heat. 2 teaspoon arrowroot (optional as thickener) Put all ingredients except arrowroot in food processor and process until finely chopped. Put into pan and bring to boil then simmer for 1-1.5 hours until reduced by a third. ................
