GLOSSARY

A

a five-star hotel a luxury hotel offering the highest international standards of comfort.

à la carte menu a menu with many different dishes individually priced and cooked to order from which a guest chooses what to eat.

a one-star hotel a cheap type of accommodation which provides merely a place to sleep.

AA Automobile Association. A leading motoring organization in Britain which offers motorists a wide range of services.

ABTA Association of British Travel Agents

accommodation a room or building to stay or live in

accompaniment small portion of food which is served with another dish. Example: croutons with fish soup.

afternoon tea meal taken in the afternoon between 4 and 5 o’clock.

air terminal a building in a town from which passengers are taken by bus to the local airport.

alcohol a colourless liquid produced by the fermentation of sugars. It is found in drinks such as beer, wine and whisky.

amontillado a type of sherry appreciated as a dry dessert wine.

angostura bitters an infusion of aromatics from West Indies, used in dashes for flavouring cocktails and mixed drinks.

AP American plan. Full board, that is, bed, breakfast and two main meals.

aperitif an alcoholic drink served before a meal. Common aperitifs are sherry, gin and tonic, whisky, Martini, port

appetizer food taken before a meal to stimulate appetite.

apron a piece of cloth which is worn to protect clothes when working.

aquavit a very strong alcoholic drink obtained from distilling wines, fruits and cereals.

B

B&B Bed and breakfast. The rate includes the room and breakfast

back of the house the part of a restaurant - including the kitchen, storerooms and dishwashing area - normally away from the customer’s sight.

baked beans haricot beans which have been cooked in tomato sauce and usually available in tins.

bakery a place provided with facilities for baking bread or cakes.

bakeware items used in the oven such as baking tin, tart dish, pie plate, pudding tin, oven tray, etc.

banquet a large formal dinner consisting of many different courses.

banqueting manager a person in a hotel handling the organization of formal functions.

bar a) a counter where alcoholic beverages are kept and served; b) an operation that serves alcoholic drinks

bargain break the sale of hotel rooms at a price which includes all main meals through a weekend period: Friday evening to Sunday afternoon.

barman / barmaid a man / woman who serves drinks in a bar.

bartender US the employee who prepares and serves drinks at a bar.

bay a shrub whose leaves are used in cooking

bed and breakfast a system of accommodation in a hotel or guest house in which you pay for a room for the night and breakfast the following morning

beef is the meat of a cow or a bull

beer an alcoholic drink made from malt and flavoured with hops.

bill a written list of charges to be paid.

bisque thick cream soup made from shellfish.

bitter (beer) ordinary English beer with a high hop content and a rather bitter taste.

bitters a strong alcoholic drink that contains an infusion of aromatics, usually prepared by blending aromatic or fruit substances with wine or spirit.

booth a seating arrangement made up of a table between two benches facing each other.

brandy a distilled spirit derived from the juice of grapes or other fruits as is the case of apple brandy or cherry brandy.

brasserie open-all-day venue serving meals and drink. They feature an informal environment and are attended by tourists, business men and shoppers

breakfast the first meal of the day, which most people eat early in the morning.

brigade group of uniformed people working together in a kitchen or restaurant.

brochure a small thin book produced e.g. to advertise a service.

brown ale a type of dark, sweet bottled beer.

brown sugar partially refined sugar with a brown colour

brunch a late morning meal eaten instead of breakfast and lunch

brut extra-dry champagne

buffet a food service arrangement in which the food is laid out in dishes on a series of tables and each person helps himself to the food of his choice.

bun small cake made of bread-like dough, usually sweetened and flavoured.

bungalow a single storey detached house. It’s a home popular with elderly people since all the rooms are on one floor.

Burger King a fast food chain owned by PepsyCo Inc.

burrito a flour tortilla wrapped around a filling as of beef, beans or cheese

bus station US noun for sideboard. A piece of furniture in the dining room where extra glassware, china, silverware and linen are stored, and where dirty dishes are placed before they are taken into the kitchen.

business centre large hotel facility offering business services (fax, answering service, computer service, secretarial service, etc.) to businessmen who need them to conduct business

busser US assistant or commis waiter whose task is to offer rolls, pour water, clear away dirty plates and cutlery and reset tables.

C

C&B Conference & Banqueting. A hotel department responsible for holding meeting and banquets.

cacaoccino it is a mixture of an espresso with hot cacao.

cafeteria a self-service restaurant where you choose your own food from one or more counters and carry it to your table yourself.

cafeteria service a way of serving food where the customer collects a tray and walks along the serving counter choosing foods which he pays for at a till as he leaves the counter.

caffè latte It is a glass of steam-heated milk with a dash of espresso. Cafè latte is considered a drink in Portuguese cafés. In the USA, coffee shops sell three variations of caffè latte according to three types of milk: skimmed, semi-skimmed, whole.

caffè mocha it is obtained by adding chocolate or cocoa powder in the espresso.

canapé a biscuit, toast or piece of bread spread with cheese, meat or fish and usually served as a starter at parties.

cappuccino it is a combination of an espresso, heated milk, milk foam, with chocolate powder sprinkled on top. It is served on a cup larger than a coffee cup.

caravan a large vehicle which can be pulled by car. It’s equipped for cooking, sleeping and living in.

carbohydrates organic compounds which are found in starch and sugar and provide the body with energy.

carvery a type of restaurant where roast meat joints are cut and served from over the counter.

castor sugar finely refined sugar

caterer a person or a company that is paid to provide food and drink for large numbers of people at parties, weddings, sporting events, etc.

catering is the provision of food and drink for large numbers of people at parties, wedding receptions, birthday parties, garden parties, schools, factory canteens, hospitals, airports, universities, etc.

charge money that must be paid or price of a service.

check-in registration of guest

check-out formalities occurring on guest’s departure.

cheese and biscuits course in a meal, served after the main course, consisting of a selection of cheese and dry or salt biscuits

cheese biscuits biscuits covered with a soft mixture that contains cream cheese.

chef a cook who has a specialised skill, such as fish chef, soup chef, etc.

cheque note to a bank requesting to pay money from your account to the person named on the note.

china / chinaware objects made of clay which include cups, saucers, plates, tea pots, sauce boats, flower vases, etc.

chocolate mousse light dessert made of whipped eggs, cream and chocolate flavouring.

chowder a thick soup made of fish or shellfish

clam a large edible shellfish that lives in sand or mud

cloakroom a room where people usually leave their coats, hats, etc., before going into a restaurant.

coach party group of tourists travelling by coach.

cocktail a cocktail is a mixture of alcoholic drinks containing several ingredients including one or more spirits and usually served before a meal.

cocktail bar a bar where cocktails are served.

coffee house a small operation where you can have coffee, tea, cappuccino, hot and cold snacks and selections of cakes, pastries and breads such as bagels and croissants.

commercial hotel a hotel which provides services for business travellers.

commis apprentice waiter or chef.

condiment a substance used to enhance the flavour of food.. Common condiments are salt, pepper, mustard, vinegar, pickles, mayonnaise and tomato sauce.

conference a meeting held by an association or organization where an expert formally discusses a topic exchanging views with the audience.

consommé a clear soup usually made from meat stock.

continental breakfast A continental breakfast is a light breakfast that usually consists of bread, butter, jam, and a hot drink, without any cooked food

contract caterer a private individual or company who, in return of a financial reward, provides food and beverage within the guidelines of a contract agreed with the parent company.

convection oven an oven that cooks by using the circulation of hot air.

convenience food a type of ready-to-eat food partly or totally prepared by food manufacturers. Examples: cakes, biscuits, sweets, pasta, soups, sauces, ice cream, etc.

convention a conference of members of a profession, political party, business group usually held yearly.

convention hotel a hotel provided with facilities for holding meeting or conventions of business or professional groups.

corporate rate the rate quoted for business guests.

cottage small, simple house in a rural setting often amid a flower garden

counter service a type of food service in which customers sit at a counter and are served by a waiter who hands them out dishes from the ones in display.

course a part of a meal

cover a place for a customer at a restaurant table with a setting of cutlery and glasses.

cover charge charge for cutlery, glasses, napkin, bread and butter in addition to the charge for food.

CP Continental Plan. The room rate includes a continental breakfast.

credit card a card that entitles the holder to charge purchases or services to his account

crisps thin slices of potatoes, fried till crisp and eaten cold as a snack (US English: potato chips).

crockery earthenware or china dishes, cups, saucers, bowls, etc. used at mealtimes

croissant rolled crescent-shaped pastry served at breakfast.

CRS Computer Reservation System. A system by which flight bookings or rooms in a hotel can be booked from a travel agent terminal.

crudités raw fruit and vegetables served as an hors d’oeuvre

cruise a sea voyage for pleasure / a holiday during which you travel on a ship and visit lots of places.

crumpet a round light soft cake with small holes on the upper side. It is eaten toasted and buttered.

curaçao a sweet alcoholic drink which can be blue, white or orange, and which is made with peel of oranges.

curry a hot tasting spicy powder used to make Indian dishes..

dairy products milk products including milk, cheese, cream, butter, yoghurt.

departure list a list prepared daily showing rooms due to be vacated.

dessert sweet dish usu. a pudding, a slice of pastry, ice cream or fresh fruit eaten at the end of a meal.

dessert station the place where desserts are stored or displayed.

deuce a table for two people

dinner dance a private social gathering at which guests have dinner and evening entertainment where they dance to music.

dish plate of prepared food.

doorman employee who is at the front of the hotel to assist with luggage and taxis.

double-decker sandwich sandwich made of three slices of bread with two layers of filling.

double occupancy a room occupied by two people.

double room room for two people.

E

E-mail a facility that allows communications to be sent and responded to throughout a computerized system.

eggs benedict two poached eggs on a toast English muffin with Canadian bacon and topped with Hollandaise sauce

English breakfast an English breakfast is a breakfast which consists of cooked food, such as bacon and eggs, in addition to toast and marmalade and tea or coffee.

English service a type of service in which the waiter from the left serves each guest from a large flat dish.

entrée the main dish of a meal.

entremets sweet course consisting of puddings, pastries, ices, etc.

EP European Plan. The room rate does not include any meals.

EPOS Electronic Point of Sale. The place at which a sale is made, often far removed from the central processor

espresso it is a small strong black coffee obtained by forcing steam through freshly-ground fine coffee. It is served in a tiny cup. A doppio is the Italian for a double-sized espresso.

F

F&B Food & Beverage

fast food 1. food that can be prepared, served and eaten quickly, such as hamburgers, hot dogs, pizzas. 2. snack bar or restaurant offering fast food.

fats compounds derived from plants and animals. They provide energy and protect vital organs.

FAX Facsimile machine. A machine capable of transmitting and receiving exact copies of documents or photographs along telephone lines.

FB full board. The rate includes the room and all meals. It is like AP.

finger buffet a type of buffet where food items are mouthsized pieces (sandwiches, small pastries, etc.) which guests eat with their fingers.

fino a quality of sherry with a strong flavour of almond.

fish fingers pieces of white fish shaped into oblongs and coated with breadcrumbs and fried.

flavoured coffees they are made with a dash of flavoured syrup added to the coffee. Some of the most common include almond (café amandine), cinnamon, vanilla, and hazelnut.

Florida Salad fresh orange and grapefruit segments set with cottage cheese on a bed of crisp lettuce with apple.

fork buffet a type of function catering where guests eat standing up and forking food from a plate they hold in one hand.

fortified wine a wine to which alcohol has been added during or after fermentation.

four top a table for four people

free of charge without any payment to be made.

French service a type of service in which the waiter from the left offers the guest a dish and the guest helps himself from it.

front desk reception desk at the entrance to a hotel

front of the house the part of a restaurant - including reception, waiting room and dining room - normally visible to the public.

frostings they are obtained by dipping glasses in egg white or lemon juice then into instant coffee or cocoa with caster sugar.

fruit juice juice from fruit served as an appetizer or starter (orange juice, pineapple juice, tomato juice)

fruit salad a dish made of pieces of fresh fruit mixed with sugar and served in a bowl.

fudge a soft brown sweet made from sugar, butter and milk, often with other things to give flavour.

full bodied wine a wine with a high content of alcohol or tannin.

function chart chart showing the functions to be held over a period of time.

function diary a list showing the dates, times and rooms for functions to be held.

function folder a cover containing a set of loose sheets produced by the banqueting department to be distributed to prospective clients.

function gathering of people for a meal.

function instruction sheet a form where function details are entered

function room a special room for holding functions in.

G

garnish a food item added to a dish or drink for decoration or extra flavouring.

glassware objects made of glass such as glasses, bowls, glass containers

grenadine a red non-alcoholic sugar syrup used for sweetness

grill room a restaurant which specialises in grilled food, usually meat, fish and some vegetables.

gueridon service a formal type of service in which dishes are served from a trolley where they may be specially prepared.

guest house a family-owned and -run house offering guests bed and breakfast.

H

hall large room at the entrance to a hotel

ham is the meat from the top of the back legs of a pig

hamburger round, flat minced meat grilled and usually served in a toasted bread roll.

happy hour a time during the early evening when a bar offer drinks at a cheaper price.

HB half board. The rate includes the room and two meals: breakfast and lunch or dinner. It is like MAP.

high tea early evening meal similar to a light supper, usually with a cooked dish or sandwiches.

holiday camps places where people (holiday makers, Scouts, students, etc.) live temporarily in tents, huts or wooden chalets.

holiday village a self-contained resort complex which provides accommodation, catering and recreational facilities for people on holiday.

homestays family home stays, that is, families welcoming visitors into their homes.

hors d’oeuvre cold tasting food served at the beginning of a meal.

hostel a building providing cheap food and lodging for students, travellers and people without homes.

hotel a building which provides accommodation and meals for people in return for payment.

hotel chains groups of hotels, some of which owned by large companies, operating nation- or worldwide and with a prominent position in the hotel industry.

hotelier a person who owns or manages a hotel

housekeeping a hotel department responsible for the preparation of guest rooms and the cleanliness of all public areas.

I

ice cream mixture of cream, eggs, sugar and flavouring.

indoor situated inside a building.

in-flight during a flight.

ingredient item used in making a dish of food.

inn a small old house offering accommodation and food to travellers

instant coffee powder used to make coffee.

Irish coffee hot coffee, served in a glass, with Irish whiskey and whipped cream.

IT Inclusive Terms. Hotel services are covered by a single price quoted for an entire period. This rate applies to groups or conference delegates.

J

jam boiled fruit preserved in sugar

joint a piece of meat suitable for roasting.

jug a glass container with a handle, used for pouring liquids.

juice liquid inside a fruit or vegetable

junk food commercially prepared food containing few fresh ingredients.

julienne to cut into even, long strips.

K

kebabs a Middle East dish made up of skewered lamb with peppers, tomatoes, mushrooms and onions grilled and served on rice flavoured with spices.

key card a card or booklet given to a guest on arrival to show the room number and room rate.

KFC Kentucky Fried Chicken, a fast food chain owned by PepsyCo Inc.

kitchenware refers to kitchen implements such as spatula, ladle, whisk, colander, olive stoner, scissors, chopping board, etc.

L

lager a light coloured beer of German or Danish origin which is served cool.

lay the table put plates, knives, forks, glasses on the table for a meal

Lemon Chicken cubes of chicken breast marinated in lemon and oil with mushrooms, celery, fresh ginger, and sugar.

light ale a slightly fizzy bottled beer, which is also called Pale Ale

liqueur a strong alcoholic drink with a sweet taste usually drunk after a meal.

lobby main entrance hall of a hotel or large restaurant.

long drinks bar drinks made up of spirits to which soda water, tonic water, fruit juice, etc. is added (whisky and soda, gin and tonic).

lounge bar a bar provided with a TV set where hotel guests take drinks while watching television, reading a newspaper or talking with friends.

low season off-peak period of the year

luggage porter a member of the uniformed staff who takes luggage from the entrance hall to guests’ rooms.

lunch a meal that you have in the middle of the day.

mail shot a circular sales letter used to inform clients of new or improved facilities.

maître d’ the head waiter who seats customers and is in charge of the waiting staff.

manzanilla a type of sherry produced around Sanlucar de Barrameda (Southern Spain) with a flavour of apple and used as a dessert wine.

maraschino a colourless sweet liqueur made from a small black cherry grown in Dalmatia.

menu a printed list of dishes available at a restaurant

mild a sweet beer which is darker than bitter.

milk shake drink made of milk and flavouring mixed or shaken until frothy.

mixing glass a large tall glass provided with straight sides and a pouring lip.

motel a type of hotel situated on a highway or motorway offering parking, lodging and catering facilities to motorists.

muffin a light flat round spongy cake, sometimes with dried fruit in it, eaten toasted and buttered with jam or cream.

nacho a triangular piece of tortilla topped with cheese or chilli-pepper sauce and broiled

net rate a rate offered to wholesale travel agents which is net of commission.

night club a licensed operation providing facilities for eating, drinking and entertainment.

nutmeg a spice which is used grated and sprinkled onto the drinks before serving to prevent loss of flavour.

O

OA office automation is a term used to refer to the use of technology to support office communications and information-related activities.

oloroso a creamy sweet quality of sherry appreciated as a dessert wine.

overbooking the practice of accepting more reservations than there are rooms available.

oyster bar a bar serving shellfish (oysters, mussels, shrimps and lobsters) and white wine.

package tour a combination of services which comprise transport, accommodation, meals, coach transfers, attractions and entertainment, etc.

packed lunch cold food such as sandwiches, fruit, etc., wrapped in paper or packed in a box which is taken on an outing and eaten for lunch.

pancake flat soft cake made of flour, milk and eggs.

pâté paste made of cooked meat or fish finely minced

piano bar a type of bar offering drinks, night meals and dancing to live music.

Pizza Hut a fast food chain owned by PepsyCo Inc.

ploughman’s lunch a meal of bread, Cheddar cheese and butter, usually accompanied by tomato salad and sweet pickles

POS Point of Sale. The place at which a sale is made, often far removed from the central processor.

pork pie is a round pie with cooked minced pork inside the pastry. It is usually eaten cold.

prawn cocktail starter consisting of shelled prawns in mayonnaise and tomato dressing, served in a glass.

preserves are foods such as jam, marmalade, or pickle, that are made by cooking fruit or vegetables and kept in jars or cans for future use.

proteins organic compounds that build and maintain cells.

public house / pub a licensed operation selling beer, wine, spirits and often food to the public for consumption on the premises.

Q

qualifications documents, such as a degree or diploma, which prove that one has successfully completed a course of study which allows him to work in a trade or profession.

quiche savoury tart made of pastry and a mixture of ingredients such as eggs, milk, onion, bacon, vegetables.

R

rack rate the price advertised in the hotel and equivalent to full rate or full tariff.

rare referred to the meat cooked for a short time.

registration card a card given to each guest on arrival to complete with details of name and address.

rèléve a joint of meat, or poultry or game, served with vegetables and potatoes.

reservation an advance request for a hotel room, a table in a restaurant or a seat on a train or plane..

reservation chart a chart showing the room nights available for each specific room in the hotel.

reservations clerk a hotel employee who handles room reservations.

reservation diary a diary with details of all future bookings.

reservation form a form the reservations clerk fills in when he makes a room reservation.

resort place situated near the seaside or in the mountains where people go on holiday.

resort hotel hotel situated in a resort.

restaurant reservation diary a ledger with a separate page for each day, giving a list of all the customers who booked a meal for a specified date and time.

ristretto it is a more concentrated espresso obtained from steam passing through the coffee very slowly.

roast beef & Yorkshire pudding a mixture of eggs, flour and milk, cooked in the oven, and traditionally served with roast beef.

room reservation diary a ledger which sorts the reservations that have been received into their date of arrival.

safe deposit a facility offered to guests for the storage of valuable property.

salads mixtures of raw or cooked vegetables, herbs, etc., usually seasoned with oil and vinegar and often eaten with eggs, mozzarella, smoked salmon, chicken, parma ham. They are considered as a substantial main course.

salad bar self-service bar where customers help themselves to a wide variety of vegetable salads.

sandwich bar a small shop where you usually buy sandwiches, salads, light dishes and soft drinks to take away.

sandwich two slices of bread with meat, cheese, etc. between them.

sausage roll a savoury snack made by a small amount of sausage meat covered with pastry and cooked.

scone is a soft round cake of flour, fat, and egg. It is cooked either in an oven or on a griddle and eaten split and buttered.

seat turnover the use of a table more than once during a meal service.

seating chart a diagram of the table layout in a restaurant.

self-catering flats holiday flats providing rented accommodation with cooking facilities but without food.

self-service restaurant restaurant (such as a cafeteria) where guests take a tray and help themselves to food.

seminar a small class for discussion and research on a particular topic with a teacher or an expert.

servery a counter in the restaurant or a place close to it where waiters pick up dishes ready to be taken to the guests’ tables.

set meal a meal with a limited choice of dishes.

shaker a metal container for shaking together the ingredients of cocktails.

shepherd’s pie a savoury dish containing minced meat mixed with onions, carrots and gravy, topped with a layer of mashed potato and then baked.

sherry a wine from Southern Spain (Jerez de la Frontera) fortified with brandy. Sherry is appreciated as an apéritif and as a dessert wine.

sherry trifle a cake of jam and fruit soaked in sherry topped with custard sauce, whipped cream, candied fruit and nuts.

shift a scheduled period of work

short drinks are drinks like cocktails, liqueurs, aperitifs, etc. which have no additional mixers.

side dish a food item served in addition to the entrée.

sideboard flat-topped cupboard at the side of a dining-room for supporting and containing dishes, table linen, cutlery, decanters, etc. for use on the tables.

silver service a way of serving food which is presented to the customer in its complete, decorated form before being portioned at a side table and then served. It is used for more elaborate meals and involves a high level of personal attention for the customer

single room room for one person.

singles bar a type of American bar attended by unmarried or divorced people hoping to meet others.

snack a snack is a light, quick meal which you eat instead of a main meal or between main meals.

snack bar a snack bar is a café or other place where you can buy light meals, sandwiches, drinks, etc.

soda a fizzy beverage obtained by adding gas to water. Used with alcohol it makes long fizzy drinks.

soft drinks drinks which have no alcohol.

sommelier a waiter responsible for the service of all alcoholic drinks during the meals.

sorbet a sweet made of lemon, strawberry or pineapple juices and liqueurs.

soup liquid dish eaten at the beginning of a meal. It is made by boiling meat (consommé), fish (bisque), or vegetables (potage) in water. Example: onion soup, prawn and fennel bisque.

special rates rates quoted for coach parties, conventions, meetings, exhibitions, etc.

staff people who work for an organization.

starter first course in a meal (US appetizer) containing more than two courses.

station a set number of tables which station waiters serve from one sideboard.

station head waiter a head waiter who is in charge of a station and takes the orders from customers.

steak and kidney pie a savoury pie made of meat cubes and kidney cooked together with onions in gravy sauce

stout heavy, strong and dark beer made with hops and barley. Best known stouts are Guinness and Mackeson

suite a series of rooms in a hotel suitable for accommodation, exhibition, or banqueting purposes.

sundae ice cream with nuts, whipped cream, and fruit on top.

table chart the layout of the table to show where each person is to sit.

table d’hôte menu a menu with a limited number of dishes offered at a fixed price to all of the guests.

table linen tablecloths, napkins.

table service restaurant service in which customers are seated at tables where food is served by waiters.

table setting the arrangement of plates, silverware and glassware on a table

table wine a still wine usually served with food that contains less than 15% alcohol

tableware such items as knives, forks, spoons, plates, bowls, dishes and implements for use at meals.

taco a corn crisp tortilla folded around a filling such as ground meat or cheese and vegetables

tarragon a herb used in cooking to add flavour to food

tea cake is a type of bun with raisins in it, usually eaten toasted with butter

tortilla a round thin pancake made with eggs and corn flour

tour operator a person or company who bulk-buys a range of different tourist products (airline seats, hotel rooms, coach transfer facilities, attractions and entertainment) which he then combines into package holidays or package tours to sell to travel agents or to the tourist direct.

travel agent a person handling a range of services, including travel reservations, hotel bookings, theatre tickets, etc.

turnover the volume of sales of goods or services

veal is the meat from a calf

vermouth an alcoholic beverage made from white wine flavoured with seeds, herbs, barks, flowers and spices.

voucher a piece of paper showing that money has been paid. It is given instead of money.

W

waiter the employee who takes food orders from customers and serves meals.

welcome homes family homes offering comfort, convenience and hospitality to visitors and holiday makers. They provide bed and breakfast and assistance in meeting individual requirements.
