Fall is quickly making way for winter. Celebrate the change of season with a "Winter Wonderland" themed dinner party.

D E C O R AT I O N S ? Heating apple cider on the stove is the perfect way to fill your house with delicious

aromas. Serve the cider at the end of the night with dessert. ? Fill glass vases with white sugar, bare twigs and branches for snowy decor. ? Place stringed lights into empty Freixenet bottles. Spray-paint small branches

silver and place in the bottles for an extra touch of elegance.

SET THE TABLE ? Set your table with blue and white linens. This color combination conveys the

GIVING BACK

Support your local charity by hosting a "Giving Back" dinner party. Ask guests to donate an "entrance fee" such as shoes, jackets or toys for local shelters. Following dinner, gather guests for a gift-wrapping party where their donations will be prepared for delivery.

? Write each guests' name on ribbon as a fun alternative for place cards. Tie the ribbon around the napkin and utensils (similar to a napkin ring) and place the setting in the center of the plate.

WHAT TO MAKE - HORS D'OEUVRES

Holiday menus may vary from table to table, but these delicious recipes will dazzle every crowd. Simple adjustments to the recipes can be made to match every holiday this season.

PUMPERNICKEL SANDWICH

Ingredients

Pumpernickel bread Gorgonzola cheese

Black mission figs Serrano ham

Directions

Spread Gorgonzola cheese in between two layers of pumpernickel, then cut into four petite squares. Cut a fig into quarters and place a section onto each of the sandwiches. Place a half slice of Serrano ham on top of each sandwich.

CUCUMBER CUP

Ingredients

Cucumbers Hummus ? Can be flavored to preference Red & yellow bell peppers

Directions

Create a cucumber ring by cutting a quarter inch slice of cucumber and removing its center with a circular cookie cutter. Then, using a mandolin, cut the remaining cucumber lengthwise. Cut that cucumber ribbon in half. Roll the cucumber ribbon inside of the ring and fill it with hummus. Julienne both red and yellow peppers and stick them vertically into the hummus as if they were "flags".

SMOKED SALMON CANAP?

Ingredients

Canap? cups Cr?me fra?che Smoked salmon

Caviar Fresh dill

Directions

Fill canap? cup with cr?me fra?che. Roll a small piece of smoked salmon and place on top of cr?me fra?che. Finish the canap? with a small amount of caviar and fresh dill.

WHAT TO MAKE

Be sure to provide plenty of options for guests' preferences and dietary needs. From appetizers to desserts, a dinner party should consist of at least 3 courses.

ROAST CHICKEN WITH APPLE

Pair with Elyssia Pinot Noir Brut

Ingredients

3 lbs chicken 4 Granny Smith apples 2 large onions 2 oz currants

1/2 glass dry white wine 1/2 glass sweet wine 2 tsp ground cinnamon 4 Tbsp olive oil

Directions

Pre-heat over to 550F. Thoroughly clean the chicken by rinsing under cold running water, inside and out, and dry with paper towels. Peel the onions and cut into thin strips. Peel the apples and dice. In a bowl, mix onions, apples, currants, cinnamon, and sweet wine. Stuff the chicken with this mixture and place in a clay baking dish. Rub with oil and place in the oven. Allow to cook for approximately 90 minutes. Baste often with the cooking juices. Before removing, pour the white wine over the chicken and allow to cook 10 more minutes. Serve with the stuffing and a vegetable garnish.

CATALAN CREAM CUSTARD

Pair with Carta Nevada Semi Dry

Ingredients

6 eggs 3-1/4 cups milk 7 oz sugar

2 Tbsp corn starch Zest of 1/2 lemon Salt

Directions

Separate the egg yolks and place in a mixing bowl. Discard the egg whites. Add lemon zest and a pinch of salt and mix.

Pour the egg mixture into a saucepan and place on low heat. Add milk and stir with a wooden spoon, bringing it to a low boil.

Add the sugar, reserving three teaspoons for later, and stir slowly to mix contents.

After sugar has dissolved, add corn starch and continue to stir. Bring to a low boil, stirring contents to ensure it does not burn. Once thickened, pour into individual bowls and place in the refrigerator. When ready to serve, remove from the refrigerator and sprinkle with the remaining sugar. You can also use a kitchen torch to burn the top coat until it caramelizes.

CAVA & COCKTAILS

Every party needs delicious cocktails to start the evening off right. Enjoy a selection of recipes to make your guests happy, no matter what their preference.

FRENCH 75

Ingredients 3/4 oz triple sec 3/4 oz fresh sour mix 1/2 oz simple syrup 3 oz Cordon Negro Brut

Directions

Mix together and serve in a chilled martini glass, no ice. Garnish with orange zest.

POINSETTIA

Ingredients 1/2 oz orange liqueur 3 oz cranberry juice cocktail Chilled orange wedge 4-5 oz Carta Nevada Brut

Directions

In a highball glass or sparkling wine flute, squeeze the orange wedge. Mix liqueur and cranberry juice and add cava. Stir gently and garnish with a lime twist.

WINTERFRUIT PUNCH

Ingredients 12 oz frozen cranberry-apple juice concentrate 1/2 cup orange-flavored liqueur 1 Tbsp lemon juice 3 cups ice cubes 2 bottles Carta Nevada Brut

Directions Mix concentrate, liqueur and lemon juice in a large pitcher. Add apple slices and ice cubes and mix thoroughly. For each serving, pour one part juice mixture and two parts sparkling wine into champagne flute.

CHAMPAGNE COCKTAIL

Ingredients

1/2 oz brandy 1 sugar cube 3 dash bitters Champagne flute Cordon Negro Extra Dry

Directions

In a champagne flute, combine sugar cube, bitters and brandy. While stirring, fill the remaining glass with Cordon Negro Extra Dry.

ARCTIC KISS

Ingredients 1 oz cherry brandy 1/2 oz triple sec 1 oz fresh pineapple juice 4 oz Cordon Negro Brut

Directions

Mix cherry brandy, triple sec and pineapple juice in a shaker with a handful of ice and strain into a chilled flute glass. Fill with cava and garnish with a fresh cranberry.

BABY BELLINI

(For the designated drivers)

Ingredients Sparkling cider Peach nectar Lemon juice 3 rounded tsp of peach sorbet

Directions

Mix together sparkling cider, peach nectar and lemon juice. Fill a champagne flute slightly more than half way with the mixture. Carefully add the sorbet balls.
