Use an electric beater to mix the ingredients until pale and creamy.Add 1 egg to the mixture at a time, beating the mixture after each egg. Add ? the flour and ? the milk and stir the mixture. Then place the rest of the flour and milk and stir the mixture again.Fill your patty cake cups to 1/3 or 2 level tablespoonsBake for 15 to 17 minutesStand cakes in the pans for 2 minutes and then transfer to a wire rack.Chocolate cakeIngredients:270g (1 1/3 cups, firmly packed) brown sugar185ml (3/4 cup) milk125g butter, cubed50g (1/2 cup) cocoa powder1/4 teaspoon bicarbonate of soda150g (1 cup) self-raising flour2 tablespoons plain flour3 eggs, lightly whiskedMethodPreheat oven to 160°C. Brush a deep, square, 19cm (base measurement) cake pan (see tip below) with the melted butter to lightly grease. Line the base and sides of the pan with non-stick baking paper.Place the sugar, milk and butter in a large saucepan. Use a fine sieve to sift the cocoa and bicarbonate of soda over the mixture. Place the pan over medium-low heat and use a whisk to stir until the mixture is smooth (don't boil the mixture). (See microwave tip.) Remove the pan from the heat and set aside for 5 minutes to cool slightly.Use a sieve to sift half of each the self-raising and plain flours into the pan. Use the whisk to stir until the mixture is smooth. Repeat with the remaining flours. Add the eggs and continue to stir until well combined.Pour the mixture into the prepared cake pan and gently tap the pan on a bench to release any large air bubbles. Bake in preheated oven for 45-55 minutes or until a skewer inserted in the centre of the cake comes out clean. Set aside for 2 minutes before turning onto a wire rack. Set aside for 1 3/4 hours or until completely cool. BiscuitsIngredients:250 grams butter at room temperature125 grams (? of cup) icing sugar mixture1 teaspoon of vanilla essence300 grams (2 cups) plain flour70 grams (1/2 cup) of custard powder2 tablespoons of milkMethod:Place the sugar and the butter in a bowl. Using an electric beater, beat until pale and creamy. Add the vanilla essence and beat some more. Add the flour, custard powder and milk and stir with a wooden spoon until a soft dough forms.Place some flour on the bench and then knead the dough. Make the dough into a ball. Cover the dough with glad wrap and then place the dough into the fridge for 1 hour.Preheat the oven at 160oC and line to baking trays with baking paper.Place more flour on the bench, then using a rolling pin roll out the dough to 4 mm thickness. Use any shape cutter you like to make the biscuits. Place the cookies in the oven and cook for 15 minutes or until golden brown.Once done let the trays cool and then transfer the cookies to a wire rack to cool further.SconesIngredients3 cups of self-raising flourPinch of salt1 cup cream1 cup of lemonadeMethod:1. Preheat the oven at 220oC 2. Sift the flour and salt into a large bowl.3. Make a well in the middle of the flour and pour the cream and lemonade into it.4. Mix with a butter knife so the mixture comes together.5. Place some flour on your bench and then pour the mixture onto the bench. Knead until smooth and light.6. Roll out your mixture to about 1 ? cm thickness. Use a round cutter to cut out your scones.7. Place the scones on a baking tray with baking paper on it.8.
